Ingredientes

  • 2 ounce Cascabels
  • 2 x Cloves crushed garlic,
  • 1 x Orange, juice and zest from
  • 1 Tbsp. Grnd allspice
  • 2 Tbsp. Salt
  • 2 Tbsp. Molasses
  • 1/2 Tbsp. Oregano
  • 1 Tbsp. Freshly grnd black pepper
  • 1 dsh Extra virgin olive oil
  • 1 x Good squeeze of a fresh lime

Direcciones

  1. For meat, fish or possibly vegetable kebabs.
  2. Makes approximately 2 c..
  3. Toast, soak, puree and sieve 2 ounce of cascabels. Mix together with remaining ingredients. Marinate meat overnight and fish/vegetables for 4 hrs. Skewer and smoke over wood. Reduce marinade in a pan with a blob of butter and serve with the kebabs.
