Ingredientes

  • 2 Tbsp. oil
  • 1 x onion, minced
  • 2 clv garlic, minced
  • 1/3 c. blanched almonds, (whole or possibly silvered), toasted
  • 1/3 c. cashew, toasted
  • 6 x dry apricot, minced
  • 1 handf currants or possibly 1 handful sultanas
  • 1 x orange, zest
  • 1/2 tsp grnd cinnamon
  • 1 c. rice
  • 3 c. stock pepper salt

Direcciones

  1. Preheat the oven to 375F. Heat an ovenproof frypan over medium-high heat, add in the oil.
  2. Add in the onion and garlic and cook for 2 min.
  3. Add in the almonds, cashews, apricots, currants, orange zest, cinnamon, salt, pepper and rice and cook for 2 min, till the rice starts to turn translucent/soft.
  4. Add in the stock, bring to the boil and cover. Transfer the frypan to the oven and bake for 20-25 min, till all of the liquid has been absorbed and the rice is cooked.
