- Preheat the oven to 375F. Heat an ovenproof frypan over medium-high heat, add in the oil.
- Add in the onion and garlic and cook for 2 min.
- Add in the almonds, cashews, apricots, currants, orange zest, cinnamon, salt, pepper and rice and cook for 2 min, till the rice starts to turn translucent/soft.
- Add in the stock, bring to the boil and cover. Transfer the frypan to the oven and bake for 20-25 min, till all of the liquid has been absorbed and the rice is cooked.
