Receta Cashew And Almond Pilaf

Ingredientes
- 2 Tbsp. oil
- 1 x onion, minced
- 2 clv garlic, minced
- 1/3 c. blanched almonds, (whole or possibly silvered), toasted
- 1/3 c. cashew, toasted
- 6 x dry apricot, minced
- 1 handf currants or possibly 1 handful sultanas
- 1 x orange, zest
- 1/2 tsp grnd cinnamon
- 1 c. rice
- 3 c. stock pepper salt
Direcciones
- Preheat the oven to 375F. Heat an ovenproof frypan over medium-high heat, add in the oil.
- Add in the onion and garlic and cook for 2 min.
- Add in the almonds, cashews, apricots, currants, orange zest, cinnamon, salt, pepper and rice and cook for 2 min, till the rice starts to turn translucent/soft.
- Add in the stock, bring to the boil and cover. Transfer the frypan to the oven and bake for 20-25 min, till all of the liquid has been absorbed and the rice is cooked.
