%20you%20have%20to%20take%20advantage%20of%20it%20and%20make%20yourself%20a%20good%20pot%20of%20soup!%3C/p%3E%3Cp%3ESome%20of%20my%20most%20favorite%20soups%20can%20be%20found%20in%20Julia%20Child's%20Mastering%20the%20Art%20of%20French%20Cooking%20Cookbooks,%20both%20volumes%20one%20and%20two.%20I%20haven't%20made%20one%20I%20didn't%20love.%20%20True%20to%20Julia's%20style,%20there%20are%20a%20few%20steps.%20They%20are%20not%20hard%20steps%20but%20are%20worth%20it.%3C/p%3E%3Cp%3EVery%20much%20so.%3C/p%3E%3Cp%3EI%20did%20one%20thing%20differently.%20I%20added%20dill.%20I%20didn't%20have%20fresh%20dill%20on%20hand%20so%20I%20used%20a%20pretty%20amazing%20spice%20blend%20by%20WildTree%20called%20Dill%20Dip%20Blend.%20It%20does%20make%20a%20fantastically%20addicting%20dip%20but%20is%20equally%20delicious%20as%20a%20seasoning.%3C/p%3E%3Cp%3ECelery%20Soup%20with%20Potatoes,%20Leeks%20and%20Dill%3C/p%3E%3Cp%3EInspired%20by%20Julia%20Child%3C/p%3E%3Cp%3EIn%20a%20heavy%20bottomed%203%20quart%20pot,%20melt%20the%20butter%20and%20slowly%20cook%20the%20celery%20and%20leeks%20with%20a%201/4%20tsp%20of%20salt,%20covered,%20until%20tender%20but%20not%20brown.%20Add%20the%20broth%20and%20bring%20to%20a%20boil.%20Stir%20in%20rice%20and%20Dill%20Dip%20Blend,%20reduce%20to%20a%20simmer%20and%20continue%20cooking,%20uncovered%20for%2025%20minutes.%3C/p%3E%3Cp%3EWhile%20that's%20going%20on,%20boil%20the%20potatoes%20with%202%20cups%20of%20water%20and%201/2%20tsp%20of%20salt.%20When%20tender,%20drain%20the%20cooking%20water%20into%20the%20celery%20and%20leeks.%20Puree%20the%20potatoes.%20I%20used%20a%20ricer%20and%20placed%20them%20back%20in%20the%20pan%20and%20whisked%20in%20the%20heated%20milk.%20If%20you're%20using%20a%20blender,%20beat%20along%20with%201%20cup%20of%20the%20heated%20milk,%20place%20into%20the%20pan%20and%20add%20the%20remaining%20cup%20of%20milk.%3C/p%3E%3Cp%3EOnce%20the%20celery%20and%20leeks%20have%20cooked%20a%20bit,%20puree%20the%20mixture%20with%20an%20immersion%20blender,%20or%20in%20batches%20in%20a%20blender.%20Add%20the%20potatoes%20and%20whisk%20everything%20together%20really%20well.%20%20Bring%20to%20a%20simmer%20and%20then%20beat%20in%20the%20pinch%20of%20sugar%20and%20season%20with%20salt%20and%20pepper%20to%20taste.%3C/p%3E%3Cp%3EWhen%20serving,%20add%20a%20dab%20of%20butter%20to%20each%20bowl.%20Blend%20the%20hot%20soup%20into%20the%20butter%20and%20top%20with%20croutons.%20Something%20about%20that%20dab%20of%20butter%20that%20adds%20a%20bit%20of%20richness.%20You%20can%20skip%20it%20if%20you%20choose,%20but%20treat%20yourself%20and%20give%20it%20a%20try%20it.%3C/p%3E){kind=link}
