.%3C/p%3E%3Cp%3EWarning%20:%20Long%20rambling;%20too%20easy%20recipe.%20;-)%3C/p%3E%3Cp%3EThe%20word%20Muri%20in%20this%20comes%20from%20the%20word%20'muro%20/%20mudo'%20which%20means%20fish%20head.%20And%20'Ghonto'%20usually%20means%20a%20mix%20of%20some%20things%20cooked%20together.%3C/p%3E%3Cp%3EA%20very%20popular%20Bengali%20dish,%20the%20Muri%20Ghonto%20is%20also%20made%20with%20dals%20/%20lentils%20,%20cabbage%20and%20also%20with%20a%20mix%20of%20leafy%20and%20other%20vegetables.%20But%20the%20one%20made%20with%20rice%20is%20best%20loved%20by%20all.%20It%20can%20be%20called%20as%20a%20kind%20of%20pulao%20made%20with%20fish%20head.%3C/p%3E%3Cp%3EJethi%20(aunt)%20makes%20the%20best%20Muri%20Ghonto.%20Back%20home%20our%20neighbour%20was%20a%20big%20joint%20family%20which%20Jethi%20belonged%20to.%20But%20the%20word%20'neighbours'%20was%20used%20only%20to%20describe%20to%20strangers%20that%20we%20are%20different%20families%20...%20coz%20it%20was%20difficult%20to%20make%20out%20otherwise.%3C/p%3E%3Cp%3EBoth%20our%20houses%20were%20huge.%20And%20each%20had%20four%20entries%20...%20the%20main%20gate%20for%20the%20family%20and%20other%20genteel,%20the%20one%20side%20entry%20for%20different%20vendors,%20ranging%20from%20the%20fishwala%20to%20the%20green%20grocer%20to%20the%20ones%20selling%20cotton%20bedsheets%20...%20and%20so%20on.%20The%20back%20door%20was%20for%20those%20who%20worked%20for%20the%20families%20...%20from%20the%20cook%20to%20the%20maids%20to%20the%20gardener%20...%20etc.%3C/p%3E%3Cp%3EAnd%20on%20one%20side%20a%20door%20of%20each%20house%20faced%20each%20other.%20There%20was%20only%20a%20small%20space%20between%20them.%20These%20two%20doors%20opened%20early%20at%20sunrise%20and%20were%20shut%20only%20when%20the%20families%20have%20retired%20for%20the%20day.%20Of%20course,%20they%20would%20open%20again%20sometimes%20late%20into%20the%20night%20during%20emergencies%20like%20an%20illness%20or%20someone%20arriving%20or%20leaving.%3C/p%3E%3Cp%3EAnd%20throughout%20the%20day%20there%20would%20be%20a%20constant%20flow%20of%20people%20to%20and%20from%20both%20houses.%20We%20children%20grew%20up%20together.%20It%20was%20very%20common%20to%20find%20a%20member%20of%20either%20family%20having%20breakfast,%20lunch%20or%20dinner%20in%20the%20other%20house.%3C/p%3E%3Cp%3EAnd%20when%20there%20were%20a%20lot%20of%20relatives%20visiting%20(%20and%20a%20lot%20of%20means%20a%20real%20huge%20number%20as%20with%20joint%20families)%20they%20spilled%20over%20to%20the%20other%20house.%3C/p%3E%3Cp%3EJethi%20and%20other%20kakis%20(aunts)%20were%20as%20much%20our%20own%20as%20the%20kakimas%20in%20my%20family%20...%20celebrating%20our%20successes%20in%20school,college%20and%20other%20things%20later%20in%20life,%20admonishing%20us%20for%20our%20pranks%20and%20cooking%20for%20us%20our%20favourite%20meals%20and%20dishes.%3C/p%3E%3Cp%3EEach%20had%20a%20speciality%20when%20it%20came%20to%20cooking%20...%20which%20the%20others%20did%20not%20bother%20to%20pick%20up%20or%20learn.%3C/p%3E%3Cp%3ESo%20whenever%20Jethi%20made%20the%20Muri%20Ghonto%20with%20rice%20,%20she%20would%20hurry%20over%20just%20before%20lunch,%20with%20a%20huge%20bowlful%20...%20huffing%20and%20puffing,%20her%20homely%20and%20affectionate%20round%20face%20red%20and%20bright.%3C/p%3E%3Cp%3EWiping%20her%20face%20with%20her%20aanchal,%20she%20would%20call%20out%20and%20place%20the%20bowl%20on%20the%20table%20only%20when%20somebody%20appears.%20And%20would%20hurry%20away%20...%20brushing%20away%20requests%20to%20sit%20down%20for%20a%20while%20and%20take%20a%20breath.%3C/p%3E%3Cp%3ENow%20when%20I%20recall,%20it%20was%20always%20Jethi%20herself%20who%20used%20to%20bring%20over%20stuff%20....%20never%20sent%20it%20through%20anybody%20else%20...%20not%20a%20child,%20never%20a%20maid%20or%20a%20servant.%3C/p%3E%3Cp%3EAfter%20Jethi%20and%20her%20family%20moved%20to%20Calcutta%20for%20good,%20I%20terribly%20missed%20the%20dishes%20she%20made.%20Especially%20her%20Chal%20diye%20Muri%20Ghonto.%3C/p%3E%3Cp%3EIn%20one%20of%20our%20conversations%20on%20the%20phone,%20she%20did%20mention%20the%20recipe%20...%20but%20I%20did%20not%20give%20it%20a%20try%20initially%20due%20to%20two%20reasons.%3C/p%3E%3Cp%3EOne%20...%20it%20sounded%20ridiculously%20simple.%20So%20much%20so%20that%20I%20thought%20she%20tweaked%20it%20to%20make%20it%20easy%20for%20me%20(%20I%20was%20wrong).%3C/p%3E%3Cp%3ETwo%20....%20she%20mentioned%20jeera%20/%20cumin%20seeds%20paste.%20Since%20I%20hated%20jeera%20very%20passionately%20once%20upon%20a%20time,%20I%20tried%20making%20it%20without%20the%20jeera.%3C/p%3E%3Cp%3EBad%20idea.%20Wasn't%20even%20close%20to%20Jethi's%20dish.(I%20suspect%20this%20is%20an%20East%20Bengal%20or%20Bangal%20recipe%20as%20Jethi%20has%20her%20roots%20there.)%3C/p%3E%3Cp%3ENow%20I%20make%20it%20this%20way%20...%20and%20savour%20the%20taste%20along%20with%20loads%20of%20memories.%3C/p%3E%3Cp%3ENeed%20:%3C/p%3E%3Cp%3EA%20medium%20sized%20fish%20head%20(%20I%20usually%20use%20the%20Rohu%20fish%20)%3C/p%3E%3Cp%3EHow%20to%20:%20Marinate%20the%20fish%20head%20with%20turmeric%20powder%20and%20salt.%3C/p%3E%3Cp%3EHeat%204%20tbsp%20(%20or%20more%20if%20the%20fish%20head%20is%20bigger%20)%20of%20mustard%20oil%20in%20a%20wok%20or%20kadahi.%20Fry%20the%20fish%20head%20in%20it.%20Remove%20and%20break%20into%20medium%20sized%20pieces.%20Keep%20aside.%3C/p%3E%3Cp%3EHeat%20around%202%20tbsp%20of%20mustard%20oil%20in%20another%20kadahi.%20Add%20the%20bay%20leaves,%20the%20chillies%20and%20the%20cinnamon.%3C/p%3E%3Cp%3EAdd%20the%20ginger%20paste%20and%20fry%20for%20a%20while%20...%20but%20not%20for%20too%20long.%3C/p%3E%3Cp%3EAdd%20the%20jeera%20paste%20and%20fry%20some%20more.%3C/p%3E%3Cp%3ENow%20add%20the%20fish%20pieces%20(%20or%20potatoes%20)%20and%20toss%20around%20for%20a%20while.%3C/p%3E%3Cp%3EAdd%20the%20rice,%20haldi%20powder%20and%20salt%20and%20stir%20well.%3C/p%3E%3Cp%3EAdd%20water,%20cover%20and%20cook%20till%20the%20rice%20is%20just%20done.%3C/p%3E%3Cp%3ERemove%20from%20heat,%20give%20a%20stir%20to%20separate%20the%20rice%20grains,%20cover%20and%20keep%20for%20a%20few%20more%20minutes.%3C/p%3E%3Cp%3EDone!%3C/p%3E%3Cp%3EServe%20hot.%3C/p%3E%3Cp%3ECheck%20out%20one%20of%20my%20favourite%20posts%20at%20Sandeepa's%20....%20and%20am%20not%20talking%20of%20just%20the%20Muri%20Ghonto.%20:-)%3C/p%3E%3Cp%3ETC%20all%20!!%3C/p%3E){kind=link}
