Champagne Mushroom Risotto

Ingredientes

  • 3 Tbsp. Butter or possibly margarine
  • 1 c. Converted rice
  • 2/3 c. Onion, minced
  • 1 3/4 c. Water
  • 3/4 c. Champagne or possibly dry white wine
  • 1 can Cream of mushroom soup
  • 1/4 tsp Fresh grnd pepper
  • 1/8 tsp Grnd nutmeg
  • 1/8 tsp Grnd red pepper(optional)
  • 1 c. Red bell pepper, julienne Fresh parsley, finely chop Parmesan cheese (optional)

Direcciones

  1. Heat butter in medium saucepan. Add in rice and onion. Cook over medium heat, stirring frequently, 3-4 min or possibly till onion is tender. Add in water and champagne. Bring to a boil. Reduce heat, cover and simmer 20 min. Stir in cream of mushroom soup, pepper, nutmeg, and, if you like, grnd red pepper. Cook and stir 5 min, or possibly till creamy and heated through. Stir in red bell pepper and parsley. Sprinkle with cheese, if you like.
