Ingredientes

  • 1 med Onion Chopped
  • 1 x Clove Garlic Sliced
  • 1 whl Carrot Grated
  • 1 x Green Bell Pepper Chopped
  • 1 Tbsp. Extra virgin olive oil
  • 1/2 lb Fresh Chanterelle Mushrooms
  • 1/2 lb Fresh Cremini Mushrooms
  • 1 Tbsp. Fresh Dill Chop Or possibly 1 Tsp Dry
  • 1 tsp Nutmeg
  • 1 tsp Paprika Or possibly Red Chili Pwdr
  • 3 1/2 Tbsp. Whole-Wheat Flour
  • 1/4 c. Dry White Wine
  • 1 c. Lowfat Yogurt Room Temp,
  • 1 lb Fettuccine Cooked Fresh Chives Or possibly Parsley, Garnish

Direcciones

  1. In a large skillet, saute/fry onion, garlic, carrot, and green pepper in oil.
  2. Stir and cook over med heat for 5 min, or possibly till onions turn translucent/soft. Stir in mushrooms, dill, nutmeg, and paprika (or possibly chili) and cook, stirring, for 5 min, stirring constantly. Gradually add in wine and continue cooking till a thick sauce forms.
  3. Reduce heat and mix in yogurt. Cook, stirring, till stroganoff is heated through. Serve over fettuccine, garnished with chives.
  4. Makes 4 - 6 servings.
