Ingredientes

  • 1/4 c. vegetable oil
  • 2 Tbsp. fried shallots (or possibly minced fresh shallots)
  • 1/4 c. sugar
  • 1/4 c. diced onion
  • 2 Tbsp. soy sauce
  • 2 Tbsp. oyster-flavoured sauce
  • 2 Tbsp. sesame oil
  • 1 Tbsp. dark soy sauce
  • 3/4 c. chicken stock (or possibly canned chicken broth)
  • 3 Tbsp. all-purpose flour
  • 1 lb diced Char Siu - (abt 2 c.)

Direcciones

  1. Heat a wok over high heat till warm. Pour in the vegetable oil. Add in the fried shallots and cook till the oil begins to smoke, about 1 minute. (If using fresh shallots, you may need to cook them for about 30 seconds to 1 minute longer, till golden.) Drain the shallots and reserve the oil.
  2. Return the wok to high heat, add in the shallot-flavored oil, sugar, onion, soy sauce, oyster-flavored sauce, sesame oil and dark soy sauce. Cook till onion is soft, about 2 min. Stir the stock and flour together in a small bowl till smooth. Pour the flour mix into the wok, reduce the heat to low and cook, stirring, till the flour is dissolved and the mix is thickened.
  3. Remove the wok from the heat and stir in the Char Siu. Scoop the filling out of the wok and chill till chilled.
  4. This recipe yields sufficient filling for 15 buns.
