- Heat a wok over high heat till warm. Pour in the vegetable oil. Add in the fried shallots and cook till the oil begins to smoke, about 1 minute. (If using fresh shallots, you may need to cook them for about 30 seconds to 1 minute longer, till golden.) Drain the shallots and reserve the oil.
- Return the wok to high heat, add in the shallot-flavored oil, sugar, onion, soy sauce, oyster-flavored sauce, sesame oil and dark soy sauce. Cook till onion is soft, about 2 min. Stir the stock and flour together in a small bowl till smooth. Pour the flour mix into the wok, reduce the heat to low and cook, stirring, till the flour is dissolved and the mix is thickened.
- Remove the wok from the heat and stir in the Char Siu. Scoop the filling out of the wok and chill till chilled.
- This recipe yields sufficient filling for 15 buns.
