.%3C/p%3E%3Cp%3EI%20was%20enlisted%20to%20make%20the%20Turkey,%20Dressing,%20and%20a%20casserole,%20and%20I%20threw%20in%20a%20pie%20just%20for%20good%20measure.%20(Photo%20link%20here:%20Just%20Click.)%3C/p%3E%3Cp%3EWonderful%20weekend.%20Met%20some%20of%20the%20future%20in-law%20family%20and%20we%20had%20a%20great%20time.%3C/p%3E%3Cp%3ENext%20day,%20during%20the%20Alabama%20Auburn%20game%20we%20went%20and%20had%20a%20beer%20at%20a%20Brewpub%20in%20downtown%20Portland.%3C/p%3E%3Cp%3EAnd%20I%20saw,%20Beer%20Cheese%20Soup.....%20%20I%20love%20Beer%20Cheese%20Soup.....%20and%20it%20occurred%20to%20me%20I've%20never%20blogged%20it....and%20haven't%20even%20made%20it%20in%20years.....%20%20What%20have%20I%20been%20thinking?%20%20%20So%20I%20ordered%20a%20bowl,%20it%20was%20exquisitely%20good.....%20%20and%20planned%20an%20update%20and%20counter%20attack.%3C/p%3E%3Cp%3EAnd%20guess%20what%20happened?%20%20Yup,%20I%20nailed%20it.%20%20Believe%20me,%20there%20are%20many%20times%20I%20fail,%20I%20just%20don't%20post%20them.%20But%20this%20time,%20I%20got%20it%20right.%20You%20have%20got%20to%20try%20it.%20And,%20it's%20got%20a%20%22secret%20ingredient%22%20that%20truly%20put%20it%20over%20the%20top.%20Read%20on....%3C/p%3E%3Cp%3EIngredients%20and%20Method:%3C/p%3E%3Cp%3EAdd%20butter%20to%20pressure%20cooker%20(or%20large%20saucepan)%20over%20medium-low%20heat.%20When%20melted%20and%20foamy,%20saute%20celery,%20leeks,%20and%20garlic%20for%20five%20minutes,%20until%20leeks%20are%20limp.%20Sprinkle%20flour%20over%20vegetables,%20stir%20and%20cook%20for%20two%20minutes%20more.%20Add%20bay%20leaf,%20milk,%20chicken%20broth,%20ale,%20%20dry%20mustard,%20and%20cayenne.%20If%20using%20pressure%20cooker%20(as%20I%20did)%20cover,%20bring%20to%20pressure,%20and%20cook%20for%2010%20minutes.%20If%20cooking%20stovetop,%20cook%20over%20medium%20heat,%20stirring%20%20occasionally,%20for%2040%20minutes%20until%20all%20vegetables%20are%20tender.%20Cool%20pressure%20cooker,%20release,%20and%20salt%20and%20pepper%20to%20taste.%20(same%20for%20saucepan)%3C/p%3E%3Cp%3EUsing%20a%20hand%20blender,%20or%20a%20food%20processor,%20puree%20soup%20until%20fairly%20well%20blended.%20(I%20tend%20to%20leave%20a%20bit%20unblended%20so%20it%20has%20some%20%22texture%22)%3C/p%3E%3Cp%3EReturn%20to%20low%20heat,%20and%20add%20cheese,%20(reserve%20some%20for%20garnish)%20and%20stir%20constantly%20until%20well%20blended.%3C/p%3E%3Cp%3EPour%20into%20bowls.%3C/p%3E%3Cp%3ENow%20the%20magic!%3C/p%3E%3Cp%3EPour%206%20-8%20drops%20of%20white%20truffle%20oil%20into%20each%20bowl.%20No%20more,%20as%20this%20stuff%20is%20potent.%20Garnish%20with%20cheddar%20cheese%20and%20smoked%20paprika%20(if%20you%20have%20it,%20if%20not%20omit).%20Or,%20crumbled%20bacon,%20green%20onions,%20etc.%20whatever%20you%20like%20in%20your%20cheese%20soup.%3C/p%3E%3Cp%3EEnjoy%20some%20of%20the%20best%20Beer%20Cheddar%20Soup%20I've%20ever%20had!%3C/p%3E){kind=link}
