Ingredientes

  • 1 c. Uncooked bulgur
  • 2 med Tomatoes (1 1/2 c.), minced
  • 1 c. Seeded cucumber, minced
  • 1 c. Swiss cheese (4 ounce.), cubed
  • 1/2 c. Fully cooked smoked ham, minced
  • 1/2 c. Minced fresh parsley
  • 3 x Green onions (1/4 c.), thinly sliced
  • 6 Tbsp. Olive or possibly vegetable oil
  • 6 Tbsp. Lemon juice
  • 2 Tbsp. Minced fresh mint leaves, Or possibly
  • 2 tsp Crushed dry mint leaves
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Direcciones

  1. Place bulgur in bowl; cover bulgur with cool water. Let stand 30 min; drain. Press out as much water as possible.
  2. Place bulgur, tomatoes, cucumber, cheese, ham, parsley and onions in glass or possibly plastic bowl. Mix remaining ingredients; pour over bulgur mix and toss. Cover and chill about 4 hrs. Serve on lettuce leaves if you like.
