Ingredientes

  • 1 Tbsp. Extra virgin olive oil
  • 1 x Onion -- minced
  • 3 cl Garlic -- chopped
  • 28 ounce Canned whole tomatoes
  • 1 tsp Dry oregano
  • 1/2 tsp Dry thyme
  • 1/2 tsp Pepper
  • 12 x Manicotti shells
  • 1/2 lb Sweet italian sausage -- Casin
  • 3 c. Ricotta cheese
  • 1 ounce Parmesan cheese -- grated (abo
  • 3 x Large eggs
  • 1/4 c. Parsley -- minced
  • 1/8 tsp Cayenne pepper -- more to Tast
  • 4 ounce Mozzarella cheese -- Shredded

  2. Heat oven to 375 . In large frying pan, heat oil over medium heat. Add in onion and garlic and cook till soft, 3-5 min. Stir in tomatoes with their juice and crush them with a fork. Add in oregano, thyme, 3/4 teaspoon salt and 1/4 teaspoon pepper. Boil over medium-high heat till thickened, about 15 min. Transfer tomato sauce to a bowl. Wipe out frying pan.
  3. Meanwhile, in large pot of boiling salted water, cook manicotti shells.
  4. Drain and set aside.
  5. Heat frying pan over medium-high heat. Add in sausage and cook, breaking it up with a spoon, till brown, about 5 min. With slotted spoon, transfer meat to paper towels and drain.
  6. In a large bowl, combine the sausage meat, ricotta, Parmesan, Large eggs, parsley, cayenne and the remaining salt and pepper; stir to combine. Stuff the shells with sausage mix.
  7. Spread 1 c. tomato sauce on the bottom of a 3-qt baking dish. Arrange the shells in one layer, pour remaining sauce over and sprinkle with mozzarrella. Cover with foil and bake 20 min.
  8. Uncover and bake till cheese is melted and bubbling, about 15 min. Cold slightly before serving.
