Receta Cheese and Spring Onion Quesadillas
Ingredients:
- Tortillas – 4
- Cheddar Cheese – 100 gms, grated
- Green and Red Capsicums – 150 gms, finely chopped, boiled
- Cumin Powder – 1 tsp
- Coriander Powder – 1 tsp
- Paprika – 1 tsp
- Black Pepper Powder – 1/4 tsp
- Oregano – 1/4 tsp
- Salt – 1/4 tsp
- Spring Onions – 2, finely sliced
- Coriander Leaves – handful, chopped
- Olive Oil – little
Method:
1. In a large bowl mix the cheese, capsicums, spices, spring onions and coriander leaves.
2. Heat a non-stick tawa over medium flame.
3. Place 1 tortilla and spread 1/2 of the cheese-capsicum mixture.
4. Place another tortilla on top and cook until the cheese has melted, turning once or twice.
5. Remove and cut into wedges.
