Ingredientes

  • 4 x vines of cherry tomatoes Sea salt and black pepper Extra virgin olive oil
  • 4 x thick slices farmhouse white bread Buffer to spread
  • 120 gm mild cheddar cheese finely sliced
  • 1 Tbsp. dijon mustard Small bundle chives minced in half

Direcciones

  1. Lay tomatoes on a baking sheet sprinkle with salt and pepper and splash with extra virgin olive oil.
  2. Bake in a 220C/425F/Gas Mark 7 oven for 8 min.
  3. Keep hot.
  4. Meanwhile toast the bread and butter on one side.
  5. Top the buttered side with a layer of cheese spread with a little mustard and cover with another layer of cheese.
  6. Heat and lightly brown the cheese under a warm grill.
  7. To serve top each piece of toast with a vine of tomatoes and scatter over the chives
  8. This is a good one for when youre entertaining and want something classic it looks like youve made a real effort but actually takes min to do. Vary things from time to time: instead of using mustard rub the toast with a halved clove of garlic or possibly even a few dry garlic flakes sprinkled between the layers of cheese.
