.%3C/p%3E%3Cp%3EBaked%20rice%3C/p%3E%3Cp%3EPretty%20much%20everything%20is%20better%20when%20it%E2%80%99s%20made%20in%20the%20oven.%20Ovens%20just%20have%20a%20way%20of%20making%20food%20extra%20rich%20and%20hearty.%20Just%20look%20at%20roasted%20vegetables%20%E2%80%93%20they%E2%80%99re%20infinitely%20better%20than%20veggies%20cooked%20any%20other%20way.%3C/p%3E%3Cp%3EThe%20same%20goes%20for%20baked%20rice.%20Okay,%20so%20it%E2%80%99s%20not%20exactly%20roasted,%20but%20it%20still%20ends%20up%20being%20more%20tasty,%20more%20hearty,%20and%20more%20comforting%20than%20rice%20that%E2%80%99s%20cooked%20on%20the%20hob.%3C/p%3E%3Cp%3EPlus%E2%80%A6%20when%20you%20bake%20it,%20you%20can%20add%20a%20super%20cheesy%20topping,%20which%20can%20be%20as%20gooey%20or%20as%20crispy%20as%20you%20choose.%20And%20as%20we%20all%20know,%20everything%E2%80%99s%20better%20with%20cheese.%3C/p%3E%3Cp%3EStart%20with%20some%20veggies%3C/p%3E%3Cp%3EI%20wanted%20to%20add%20some%20extra%20vegetables%20to%20my%20baked%20tomato%20rice,%20as%20I%20always%20love%20getting%20extra%20veg%20in%20wherever%20I%20can.%20But,%20I%20still%20wanted%20the%20dish%20to%20be%20rice-heavy,%20rather%20than%20veggie-heavy%20(otherwise%20I%E2%80%99d%20end%20up%20with%20another%20rice%20and%20vegetable%20casserole),%20so%20I%20didn%E2%80%99t%20go%20overboard.%3C/p%3E%3Cp%3EI%20cooked%20off%20some%20onion,%20mushrooms%20and%20spinach,%20which%20I%20chopped%20quite%20finely.%20They%20add%20a%20nice%20flavour%20to%20the%20tomato%20rice,%20and%20I%20love%20knowing%20that%20there%20are%20a%20few%20veggies%20in%20my%20side%20dish,%20but%20it%E2%80%99s%20not%20enough%20to%20take%20the%20focus%20off%20the%20rice.%3C/p%3E%3Cp%3ETomato%20rice%3C/p%3E%3Cp%3ENext,%20it%E2%80%99s%20time%20to%20complete%20the%20tomato%20sauce%20by%20adding%20a%20tin%20of%20chopped%20tomatoes.%3C/p%3E%3Cp%3EThe%20sauce%20needs%20to%20be%20pretty%20thin%20at%20this%20stage,%20as%20this%20liquid%20is%20what%20will%20cook%20the%20rice%20in%20the%20oven.%20So,%20I%20also%20added%20some%20extra%20vegetable%20stock.%3C/p%3E%3Cp%3EAdd%20the%20uncooked%20rice,%20and%20transfer%20everything%20to%20a%20baking%20dish.%20From%20this%20point%20on,%20it%20will%20cook%20itself%20%E2%80%93%20go%20and%20put%20your%20feet%20up.%3C/p%3E%3Cp%3ECheesy%20topping%3C/p%3E%3Cp%3EYou%20can%20leave%20the%20recipe%20here,%20if%20you%20like,%20and%20you%E2%80%99ll%20end%20up%20with%20a%20beautiful,%20rich%20tomatoey%20rice%20dish,%20which%20is%20entirely%20vegan.%3C/p%3E%3Cp%3EOr,%20if%20you%E2%80%99re%20anything%20like%20me%E2%80%A6%20you%E2%80%99ll%20want%20a%20cheesy%20topping.%3C/p%3E%3Cp%3EWhen%20the%20rice%20is%20pretty%20much%20cooked,%20just%20sprinkle%20some%20grated%20cheese%20on%20top,%20and%20return%20it%20to%20the%20oven%20for%20as%20long%20as%20it%20takes%20to%20get%20the%20topping%20you%20want.%20Leave%20it%20nice%20and%20gooey,%20or%20cook%20it%20a%20bit%20longer%20for%20golden%20brown,%20crispy%20cheese.%3C/p%3E%3Cp%3EAside%20from%20my%20two%20daughters%E2%80%A6%20this%20is%20the%20most%20beautiful%20thing%20I%E2%80%99ve%20ever%20seen.%3C/p%3E%3Cp%3EHow%20to%20adapt%20this%20tomato%20rice%20recipe%3C/p%3E%3Cp%3EAs%20always,%20feel%20free%20to%20mix%20up%20this%20recipe%20as%20you%20see%20fit.%20I%20wouldn%E2%80%99t%20change%20the%20rice:liquid%20ratio%20too%20much,%20just%20in%20case%20you%20end%20up%20with%20rice%20that%E2%80%99s%20crunchy%20/%20soggy.%20But%20other%20than%20that,%20go%20wild.%3C/p%3E%3Cp%3EYou%20could%20easily%20change%20the%20vegetables%20you%20use%20in%20this%20tomato%20rice%20%E2%80%93%20some%20grated%20carrot,%20diced%20peppers,%20or%20chopped%20courgette%20(zucchini)%20would%20all%20work%20nicely.%3C/p%3E%3Cp%3EYou%20could%20also%20change%20the%20flavour%20of%20the%20sauce%20%E2%80%93%20you%20could%20add%20a%20dollop%20of%20curry%20paste%20for%20an%20Indian%20vibe,%20for%20example.%20A%20spoonful%20of%20basil%20pesto%20stirred%20through%20the%20sauce%20would%20work%20really%20nicely%20too.%3C/p%3E%3Cp%3EHow%20to%20serve%20tomato%20rice%3C/p%3E%3Cp%3EThis%20baked%20tomato%20rice%20is%20probably%20best%20served%20as%20a%20side%20dish.%20It%20could%20be%20served%20alongside%20all%20sorts%20of%20things,%20such%20as:%3C/p%3E%3Cp%3EOr,%20if%20you%20want%20to%20serve%20your%20tomato%20rice%20as%20a%20main%20meal%20on%20its%20own,%20you%20might%20want%20to%20add%20a%20tin%20of%20chickpeas%20or%20something%20to%20make%20it%20a%20bit%20more%20substantial.%3C/p%3E%3Cp%3EEither%20way,%20it%E2%80%99s%20not%20hard%20to%20find%20an%20excuse%20to%20make%20this%20rich,%20cheesy,%20tomato%20baked%20rice%E2%80%A6%3C/p%3E%3Cp%3ECheesy%20tomato%20baked%20rice%3C/p%3E%3Cp%3EServings:%203%20people%3C/p%3E%3Cp%3ECalories:%20355kcal%3C/p%3E%3Cp%3EHeat%20a%20dash%20of%20oil%20in%20a%20frying%20pan,%20and%20add%20the%20diced%20onion,%20garlic,%20mushrooms%20and%20spinach.%20Cook%20for%205-10%20minutes%20over%20a%20medium%20heat,%20stirring%20regularly,%20until%20the%20vegetables%20are%20fairly%20soft.%3C
