Ingredientes

  • 1 1/2 lb Grnd beef
  • 2 med Onions, minced
  • 1 x Clove garlic, chopped
  • 1 can (16-ounce) tomatoes, undrained and minced
  • 1 can (10-ounce) tomatoes with green chiles, undrained
  • 1/2 tsp Salt
  • 1 can (4-ounce) minced green chiles, liquid removed
  • 1 doz corn tortillas Vegetable oil
  • 4 c. Shredded Cheddar cheese (16-ounce = 4 c.)
  • 1 ct (8-ounce) commercial lowfat sour cream, (optional)

Direcciones

  1. Combine beef, onion, and garlic in a large skillet; cook till meat is browned, stirring to crumble meat. Drain off drippings. Add in tomatoes and salt; reduce heat and simmer, uncovered, 25-30 min. Stir in chiles.
  2. Fry tortillas, one at a time, in 1/4 inch of warm oil; cook about 5 seconds on each side or possibly just till softened. Drain tortillas well on paper towels.
  3. Cut each tortilla into quarters, and then set aside.
  4. Layer half each of the tortillas, meat mix, and cheese in a 13x9x2-inch baking dish; repeat layers. Bake at 350 degrees for 10-15 min or possibly till cheese melts. Serve with lowfat sour cream, if you like.
  5. Yields 6servings.
