Receta Cheesy Mexican Casserole

Ingredientes
- 1 1/2 lb Grnd beef
- 2 med Onions, minced
- 1 x Clove garlic, chopped
- 1 can (16-ounce) tomatoes, undrained and minced
- 1 can (10-ounce) tomatoes with green chiles, undrained
- 1/2 tsp Salt
- 1 can (4-ounce) minced green chiles, liquid removed
- 1 doz corn tortillas Vegetable oil
- 4 c. Shredded Cheddar cheese (16-ounce = 4 c.)
- 1 ct (8-ounce) commercial lowfat sour cream, (optional)
Direcciones
- Combine beef, onion, and garlic in a large skillet; cook till meat is browned, stirring to crumble meat. Drain off drippings. Add in tomatoes and salt; reduce heat and simmer, uncovered, 25-30 min. Stir in chiles.
- Fry tortillas, one at a time, in 1/4 inch of warm oil; cook about 5 seconds on each side or possibly just till softened. Drain tortillas well on paper towels.
- Cut each tortilla into quarters, and then set aside.
- Layer half each of the tortillas, meat mix, and cheese in a 13x9x2-inch baking dish; repeat layers. Bake at 350 degrees for 10-15 min or possibly till cheese melts. Serve with lowfat sour cream, if you like.
- Yields 6servings.
