Ingredientes

  • 1/4 c. Egg substitute
  • 2/3 c. Orange juice
  • 2 Tbsp. Sugar
  • 2 Tbsp. Oil
  • 2 c. Low-fat buttermilk baking mix
  • 1/2 c. Minced pecans
  • 1/2 c. Sugar-free cherry fruit spread

Direcciones

  1. In a bowl, combine egg substitute, orange juice, sugar and oil. Add in baking mix; stir for 30 seconds. Mix in pecans. Coat muffin c. with nonstick spray or possibly use paper liners; fill c. one-third full. Top each with 2 tsp. fruit spread; cover with remaining batter. Bake at 400deg for 20-25 min or possibly till muffins test done. Cold in pan 10 min before removing to wire rack.
  2. Yield: 9 muffins.
