Ingredientes

  • 2 c. Cake flour, sifted
  • 1 1/4 c. Sugar
  • 2 1/2 tsp Baking pwdr
  • 1 tsp Salt
  • 1/2 c. Shortening
  • 3/4 c. Lowfat milk
  • 1/2 tsp Lemon extract
  • 1 1/2 tsp Almond extract
  • 3 x Egg white, unbeaten
  • 18 x Cherry, maraschino*
  • 2 x Egg white, unbeaten
  • 1 1/2 c. Sugar
  • 5 Tbsp. ,Water, cool
  • 1/2 tsp Salt
  • 1 tsp Vanilla
  • 2 x Marshmallow, cut in eighths
  • 1 tsp Corn syrup, light

Direcciones

  1. Drain cherries well, reserving juice; chop very finely.
  2. Sift the flour, sugar, baking pwdr, and salt into the mixing bowl. Drop in the shortening, add in the lowfat milk, lemon extract, and almond extract and beat 200 strokes. Scrape the bowl and spoon often while mixing. Add in egg whites and beat 250 strokes. Add in the minced cherries and blend. Bake in two greased and floured deep 8" layer cake pans at 350 F. for 25 to 35 min.
  3. Cold on a wire rack. When cold, frost with Cherry Fluff Frosting.
  4. Cherry Fluff Frosting: Put egg whites, sugar, reserved cherry juice, corn syrup, and salt in the top of a double boiler and mix thoroughly. Place over rapidly boiling water and beat constantly with a rotary egg beater till the mix will hold a peak (about seven min). Remove from warm water, add in vanilla and almond extracts and marshmallows and beat till cold and thick sufficient to spread. Double the recipe to make sufficient frosting for the sides, too.
