Cherry Tomatoes Stuffed With Shrimp

Ingredientes

  • 6 med. shrimp (about 1/4 lb.) shelled and deveined
  • 2 tbsp. chopped parsley
  • 2 tbsp. chopped fresh chives
  • 1 tbsp. lemon juice
  • 1 tbsp. extra virgin olive oil
  • Healthy pinch black pepper
  • Salt to taste
  • 1 pt. cherry tomatoes

Direcciones

  1. In a medium sized heavy saucepan bring 2 c. unsalted water to a boil over moderate high heat. Add in shrimp and cook uncovered for 3 min or possibly till they turn pink.
  2. Whirl the shrimp in a food processor for 1 minute. Transfer to a small bowl and fold in the parsley, chives, lemon juice, extra virgin olive oil, pepper and salt; cover and refrigeratein the refrigerator.
  3. Slice about 1/3 off the top of each tomato. Scoop and throw away seeds. Fill tomatoes with shrimp mix. Makes 16-20.
