Receta Cherry Tomatoes Stuffed With Shrimp

- In a medium sized heavy saucepan bring 2 c. unsalted water to a boil over moderate high heat. Add in shrimp and cook uncovered for 3 min or possibly till they turn pink.
- Whirl the shrimp in a food processor for 1 minute. Transfer to a small bowl and fold in the parsley, chives, lemon juice, extra virgin olive oil, pepper and salt; cover and refrigeratein the refrigerator.
- Slice about 1/3 off the top of each tomato. Scoop and throw away seeds. Fill tomatoes with shrimp mix. Makes 16-20.
