Ingredientes

  • 2 can chick-peas (garbanzo beans), rinsed, liquid removed (15 1/2-oz)
  • 1 jar roasted peppers or possibly pimientos liquid removed, diced (7-oz)
  • 1/4 c. minced fresh mint
  • 3 Tbsp. liquid removed capers
  • 2 lrg garlic cloves chopped
  • 3 Tbsp. olives oil
  • 1 1/2 Tbsp. fresh lemon juice

Direcciones

  1. Combine first 5 ingredients in medium bowl. Fold in oil and lemon juice.
  2. Season to taste with salt and pepper. (Can be prepared 1 day ahead.
  3. Cover and chill.)
  4. Serves 4.
