Receta Chick Pea, Roasted Pepper And Caper Salad

Ingredientes
- 2 can chick-peas (garbanzo beans), rinsed, liquid removed (15 1/2-oz)
- 1 jar roasted peppers or possibly pimientos liquid removed, diced (7-oz)
- 1/4 c. minced fresh mint
- 3 Tbsp. liquid removed capers
- 2 lrg garlic cloves chopped
- 3 Tbsp. olives oil
- 1 1/2 Tbsp. fresh lemon juice
Direcciones
- Combine first 5 ingredients in medium bowl. Fold in oil and lemon juice.
- Season to taste with salt and pepper. (Can be prepared 1 day ahead.
- Cover and chill.)
- Serves 4.
