%20%20jumbo%20packets%20of%20crisps,%20candy%20bars,%20cakes%20filled%20with%20chemicals%20and%20artificial%20flavours,%20etc.%20%20It's%20the%20same%20in%20the%20frozen%20food%20section%20.%20.%20.%20lots%20of%20ice%20cream%20bars%20and%20chips%20on%20offer,%20pizzas,%20but%20not%20a%20lot%20that%20is%20healthy%20really.%20%20The%20last%20time%20I%20bought%20some%20apples,%20I%20paid%20more%20than%2050p%20per%20apple%20and%20that's%20the%20truth!%3C/p%3E%3Cp%3EAnother%20thing%20I%20have%20noticed%20of%20late%20is%20that%20sizes%20are%20getting%20smaller.%20%20They%20may%20be%20charging%20the%20same%20prices%20for%20certain%20things%20.%20.%20.%20but%20the%20tins%20are%20smaller,%20etc.%20%20Oh%20.%20.%20.%20%20and%20don't%20get%20me%20started%20on%20toilet%20paper.%20%20%20Have%20you%20noticed%20how%20big%20around%20the%20paper%20tube%20in%20the%20middle%20has%20gotten?%20%20It%20looks%20the%20same%20from%20the%20outside%20of%20the%20roll,%20but%20with%20the%20inner%20tube%20having%20doubled%20in%20size,%20you%20are%20only%20getting%20half%20the%20amount%20of%20loo-roll%20these%20days.%3C/p%3E%3Cp%3EI%20was%20recently%20challenged%20to%20create%20a%20meal%20for%20a%20family%20of%20four%20for%20less%20than%20a%20fiver.%20It%20wasn't%20easy%20but%20I%20managed%20to%20do%20it%20and%20I%20think%20I%20did%20it%20very%20well,%20if%20I%20don't%20say%20so%20myself.%20%20%20I%20created%20a%20simple%20dish%20of%20Chicken%20with%20Cheesy%20Dumplings,%20which%20I%20think%20is%20relatively%20low%20in%20fat,%20with%20lots%20of%20veg,%20and%20a%20goodly%20amount%20of%20chicken.%3C/p%3E%3Cp%3EI%20had%20gotten%20a%20package%20of%20chicken%20breasts,%20with%20two%20nice%20sized%20ones%20in%20the%20pack,%20for%20%C2%A33.%20%20%20I%20cut%20them%20into%20strips%20and%20ended%20up%20with%20a%20nice%20little%20pile%20of%20chicken.%20%20%20With%20a%20bit%20of%20veg%20and%20a%20bit%20of%20stock,%20I%20created%20a%20tasty%20chicken%20stew%20chock%20full%20of%20flavour,%20with%20peas%20and%20carrots%20and%20onions.%3C/p%3E%3Cp%3EI%20then%20topped%20this%20delicious%20stew%20with%20some%20fluffy%20dumplings,%20which%20I%20added%20a%20bit%20of%20cheese%20to%20for%20a%20bit%20of%20extra%20flavour.%20%20The%20end%20result%20was%20a%20very%20delicious%20meal%20for%20four,%20made%20from%20scratch,%20and%20coming%20in%20at%20less%20than%20a%20fiver.%20%20You%20could%20add%20some%20mashed%20potatoes%20to%20make%20it%20even%20more%20filling%20if%20you%20wished.%20%20We%20both%20%20liked%20this.%20%20It%20really%20was%20quite%20good%20and%20fed%20us%20for%20two%20meals.%3C/p%3E%3Cp%3E*Chicken%20and%20Cheesy%20Dumplings*%3C/p%3E%3Cp%3ECheap%20and%20cheerful.%20%20Who%20doesn't%20like%20chicken%20and%20dumplings.%20%20If%20you%20buy%20your%20chicken%20breasts%20on%20sale%20and%20freeze%20them%20individually,%20you%20can%20bring%20this%20delicious%20entr%C3%A9e%20in%20for%20less%20than%20a%20fiver.%3C/p%3E%3Cp%3ESeason%20the%20chicken%20pieces%20with%20the%20salt%20and%20black%20pepper.%20%20Heat%20the%20oil%20in%20a%20large%20skillet%20which%20has%20a%20tight%20fitting%20lid.%20%20Add%20the%20chicken.%20%20Cook%20and%20stir%20until%20almost%20cooked%20through.%20%20%20Add%20the%20carrots%20and%20onions.%20%20Cook%20and%20stir%20for%20a%20few%20minutes,%20then%20add%20the%20stock,%20parsley%20and%20sage.%20%20Cover%20tightly%20and%20cook%20for%20about%205%20minutes.%20%20Stir%20in%20the%20frozen%20peas.%20%20Bring%20back%20to%20the%20boil,%20then%20reduce,%20cover%20and%20simmer%20for%20a%20further%20few%20more%20minutes,%20until%20the%20carrots%20are%20tender%20and%20the%20chicken%20is%20cooked%20through.%20%20Shake%20the%20flour%20in%20a%20jar%20with%20the%20additional%20water.%20%20%20Pour%20this%20into%20the%20chicken%20mixture,%20stirring%20constantly,%20until%20the%20mixture%20begins%20to%20bubble%20and%20thicken.%20%20Taste%20and%20adjust%20seasoning%20as%20required.%3C/p%3E%3Cp%3EWhile%20the%20chicken%20is%20cooking%20make%20the%20dumplings.%20%20Sift%20the%20flour,%20baking%20powder%20and%20salt%20into%20a%20bowl.%20%20Drop%20in%20the%20vegetable%20fat%20and%20rub%20it%20in%20with%20your%20finger%20tips%20until%20the%20mixture%20resembles%20fine%20crumbs.%20%20%20Stir%20in%20the%20cheese%20and%20the%20milk%20to%20make%20a%20soft%20dough%20that%20easily%20drops%20from%20a%20spoon.%3C/p%3E%3Cp%3EUsing%20a%20tablespoon,%20drop%20the%20dumpling%20dough%20over%20top%20of%20the%20hot%20bubbling%20chicken%20mixture%20in%20dollops.%20%20Cover%20tightly%20with%20the%20lid%20and%20cook%20for%2012%20to%2015%20minutes%20or%20until%20the%20dumplings%20are%20well%20puffed%20up%20and%20look%20dry%20on%20top%20and%20a%20toothpick%20inserted%20in%20the%20centre%20comes%20out%20clean.%20%20Don't%20be%20tempted%20to%20peek%20ahead%20of%20time.%20%20Divide%20the%20chicken%20stew%20and%20dumplings%20between%20four%20heated%20plates%20and%20serve%20hot.%3C/p%3E){kind=link}
