Chicken and Mandarin Orange Salad Sandwiches

A tasty tea sandwich I invented for my Beloved Husband, who loves mandarin oranges. Drain the mandarin oranges as well as you possibly can, or the filling will be soupy.

Ingredientes

  • 2 teaspoons olive oil
  • 1/2 pound chicken tenderloins or boneless chicken breasts
  • salt, to taste
  • pepper, to taste
  • 1/8 teaspoon rosemary, crushed
  • 2 pinches ground ginger
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1 stalk celery, finely minced
  • 1/2 cup mandarin orange, drained and finely minced
  • 1/2 cup mayonnaise
  • 1/8 teaspoon ground ginger
  • Twelve slices bread

Direcciones

  1. In a large skillet, heat olive oil. Place tenderloins in pan and sprinkle with half of the spices. Cook for five minutes over medium-high heat. Turn and sprinkle with remaining spices and cook for an additional five minutes, or just until done. Remove from heat and allow to cool.
  2. Shred chicken finely, removing any fat, skin, or gristle.
  3. Make sure oranges are drained as thoroughly as possible.
  4. Add celery, oranges, mayonnaise, and remaining ground ginger. Mix well.
  5. Spread on white or wheat bread.
