Ingredientes

  • 1 whl fresh 3lb chicken Salt to taste
  • 4 fl ounce Vegetable oil
  • 2 x Onions, diced
  • 2 x Tomatoes, blanched and diced
  • 1/2 lb Whole mushrooms
  • 13 fl ounce Water
  • 14 ounce Freshly grnd peanut butter
  • 1 x Red chilli, (optional)

Direcciones

  1. Cut up the chicken into 8 individual pcs and season with salt. In a saucepan, heat the oil and fry the chicken pcs and onions, turning till the chicken is proportionately browned. Stir in the tomatoes and cook for about 3 min. Add in the mushrooms and stir well for one minute.
  2. Add in the water and simmer slowly for about 30 min, till the chicken is more tender and nearly cooked.
  3. Put the peanut butter into a bowl with sufficient boiling water to blend it into a smooth, runny paste. Add in this paste and the chilli when the chicken is tender and almost cooked. Fold in well and simmer on a low heat, stirring regularly to avoid lumps and burning. Cook for about 20 min.
  4. When the sauce has thickened and the chicken is cooked, serve warm with rice.
