Receta Chicken And Peanut Stew

Ingredientes
- 1 whl fresh 3lb chicken Salt to taste
- 4 fl ounce Vegetable oil
- 2 x Onions, diced
- 2 x Tomatoes, blanched and diced
- 1/2 lb Whole mushrooms
- 13 fl ounce Water
- 14 ounce Freshly grnd peanut butter
- 1 x Red chilli, (optional)
Direcciones
- Cut up the chicken into 8 individual pcs and season with salt. In a saucepan, heat the oil and fry the chicken pcs and onions, turning till the chicken is proportionately browned. Stir in the tomatoes and cook for about 3 min. Add in the mushrooms and stir well for one minute.
- Add in the water and simmer slowly for about 30 min, till the chicken is more tender and nearly cooked.
- Put the peanut butter into a bowl with sufficient boiling water to blend it into a smooth, runny paste. Add in this paste and the chilli when the chicken is tender and almost cooked. Fold in well and simmer on a low heat, stirring regularly to avoid lumps and burning. Cook for about 20 min.
- When the sauce has thickened and the chicken is cooked, serve warm with rice.
