%3C/p%3E%3Cp%3EEven%20after%20our%20wedding,%20when%20Manish%20&%20I%20went%20to%20visit%20my%20home,%20I%20knew%20that%20that's%20what%20she%20would%20prepare%20for%20us!%20Its%20her%20signature%20dish%20and%20we%20simply%20love%20it.%3C/p%3E%3Cp%3EA%20very%20close%20friend%20of%20my%20mom's,%20Omana%20aunty%20gave%20her%20(or%20rather%20taught%20her)%20this%20recipe%20for%20chicken%20biriyani.%20No%20body%20who%20has%20eaten%20this%20has%20ever%20left%20the%20home%20without%20asking%20for%20its%20recipe.%20I%20recently%20made%20this%20when%20we%20visited%20Manish's%20sis%20and%20bro-in-law%20in%20Seattle%20and%20they%20too%20loved%20it!%3C/p%3E%3Cp%3EIts%20really%20easy%20to%20prepare%20and%20the%20taste%20and%20aroma%20of%20this%20dish%20is%20something%20I%20cannot%20really%20explain,%20you%20just%20have%20to%20taste%20it%20to%20know%20what%20I%20mean%20:-)%3C/p%3E%3Cp%3ECan%20you%20believe%20the%20first%20time%20my%20mom%20ever%20made%20this%20chicken%20biriyani%20was%20for%20my%201st%20birthday%20and%20that%20too%20for%20a%20group%20of%2050%20people.%20So%20it%20has%20an%20emotional%20background%20too%20:-)%20Oh%20and%20she%20made%20by%201st%20b'day%20cake%20too%20from%20scratch%20with%20few%20of%20her%20colleagues%20help...I'm%20proud%20of%20my%20mama!!%3C/p%3E%3Cp%3EThank%20you%20Omana%20aunty%20and%20thank%20you%20mummy%20for%20this%20gorgeous%20recipe%20which%20is%20a%20keeper!%3C/p%3E%3Cp%3EThe%20recipe%20below%20is%20good%20to%20serve%204-6%20people%20and%20the%20taste%20just%20gets%20better%20with%20each%20day!%20Mine%20is%20a%20spicier%20version,%20but%20you%20can%20adjust%20the%20spice%20level%20as%20per%20your%20taste.%3C/p%3E%3Cp%3EChicken%20Biriyani%20Recipe%3C/p%3E%3Cp%3EYou'll%20need%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EFor%20Cooking%20the%20Rice%3C/p%3E%3Cp%3E1.%20Wash%20and%20soak%20the%20Basmati%20rice%20in%20water%20for%202-3%20hours%20and%20drain%20it%20over%20a%20collander.%20(%20I%20usually%20skip%20this%20step%20as%20I'm%20lazy,%20but%20it%20definitely%20softens%20the%20rice)%3C/p%3E%3Cp%3E2.%20In%20a%20large%20vessel%20heat%20ghee/butter/oil%20and%20roast%20the%20whole%20spices%20until%20the%20spices%20leave%20a%20lovely%20aroma.%3C/p%3E%3Cp%3E3.%20Add%20the%20Rice%20and%20fry%20for%202%20minutes%20until%20the%20rice%20is%20coated%20with%20the%20ghee/butter/oil%20and%20the%20spices%20are%20mixed%20in.%20Add%208%20cups%20of%20water,%20enough%20salt%20to%20season%20the%20rice%20and%20cook%20until%20the%20rice%20is%20cooked%20through.%3C/p%3E%3Cp%3E4.%20Soak%20the%20Saffron%20in%20some%20warm%20milk%20and%20keep%20aside.%3C/p%3E%3Cp%3EFor%20the%20Chicken%20masala%3C/p%3E%3Cp%3E1.%20Cook%20the%20chicken%20pieces%20along%20with%20ginger-garlic%20paste,%20salt%20and%20pepper%20with%20very%20little%20water%20until%20the%20chicken%20is%20semi-cooked.%20(I%20prefer%20to%20use%20fresh%20made%20ginger-garlic%20paste)%3C/p%3E%3Cp%3E2.%20In%20a%20separate%20pan%20dry%20roast%20the%20spice%20powders%20on%20low%20heat%20(red%20chilli,%20corriander,%20turmeric%20and%20garam%20masala),%20make%20sure%20not%20to%20burn.%3C/p%3E%3Cp%3E3.%20Add%20the%20spice%20powders%20to%20the%20cooked%20chicken%20and%20cook%20on%20medium%20flame%20until%20it%20forms%20a%20gravy%20and%20the%20chicken%20is%20cooked%20well.%3C/p%3E%3Cp%3E4.%20In%20a%20mixer%20grinder%20grind%20the%20fresh%20corriander-mint%20leaves,%20tomato%20and%20Yogurt%20into%20a%20fine%20paste%20and%20lower%20the%20heat%20of%20the%20chicken%20and%20add%20this%20paste%20and%20cook%20until%20the%20gravy%20thickens%20slightly.%20Check%20for%20seasoning.%3C/p%3E%3Cp%3EFor%20Garnishing%3C/p%3E%3Cp%3E1.%20Heat%20Oil/ghee%20in%20a%20pan%20and%20start%20frying%20the%20thinly%20sliced%20Onions%20until%20they%20look%20brown%20and%20carmelised.%3C/p%3E%3Cp%3E2.%20Next%20fry%20the%20cashews%20and%20raisins%20and%20keep%20aside%20on%20a%20paper%20towel.%3C/p%3E%3Cp%3EAssembling%20the%20Chicken%20Biriyani%3C/p%3E%3Cp%3E1.%20Take%20some%202%20cups%20of%20cooked%20rice%20aside%20and%20mix%20it%20very%20gently%20with%20required%20amount%20of%20%20saffron%20milk.%20(this%20will%20provide%20a%20lovely%20yellow%20colored%20saffron%20flavored%20rice)%3C/p%3E%3Cp%3E2.%20In%20a%20large%20bottomed%20vessel%20start%20layering%20by%20adding%20some%20of%20the%20chicken%20+%20gravy.%20Add%20some%20white%20basmati%20rice%20and%20little%20yellow%20basmati%20rice%20covering%20the%20chicken%20layer.%20Add%20some%20garnishing%20of%20fried%20onions,%20cashew%20and%20raisins.%3C/p%3E%3Cp%3E3.%20Repeat%20layering%20by%20adding%20chicken%20pieces%20+%20gravy%20,%20topped%20with%20white%20and%20yellow%20rice,%20topped%20with%20garnishing%20until%20all%20the%20chicken%20and%20rice%20is%20finished.%20Make%20sure%20the%20topmost%20layer%20is%20rice.%3C/p%3E%3Cp%3E4.%20Finish%20by%20garnishing%20on%20top%20with%20the%20fried%20Onions,%20Cashews%20and%20Raisins.%20(I%20also%20added%20some%20chopped%20corriander%20leaves%20on%20top%20-%20its%20optional).%3C/p%3E%3Cp%3E5.%20Close%20the%20vessel%20with%20a%20good%20fitting%20lid%20and%20cook%20on%20very%20low%20flame%20for%202-3%20minutes%20(%20What%20I%20normally%20do%20is,%20heat%20my%20dosa%20kallu%20(or%20a%20cast-iron%20pan)%20and%20place%20the%20biriyani%20vessel%20on%20top%20of%20it%20,%20cooking%20on%20low%20heat%20for%20few%20minutes)%20-%20If%20you%20have%20an%20Oven%20proof%20vessel,%20you%20could%20also%20cook%20in%20the%20oven%20at%20200F%20,%20make%20sure%20the%20vessel%20is%20closed.%3C/p%3E%3Cp%3E6.%20Take%20off%20the%20heat%20and%20let%20the%20biriyani%20rest%20for%20few%20minutes%20and%20then%20serve%20hot%20and%20enjoy!%3C/p%3E%3Cp%3ESuggestions%3C/p%3E%3Cp%3EIf%20you%20do%20not%20have%20Saffron,%20roast%201%20tsp%20turmeric%20powder%20in%20a%20frying%20pan%20and%20then%20mix%20it%20to%201/4%20cup%20of%20water%20and%20sprinkle%20this%20water%20to%20some%20Rice%20until%20it%20becomes%20yellow,%20else%20sprinkle%20it%20directly%20into%20the%20rice%20while%20layering.%20(The%20roasting%20helps%20to%20reduce%20the%20raw%20turmeric%20taste%20and%20smell)%20--%20Or%20else%20use%20yellow%20food%20color%20:-)%3C/p%3E%3Cp%3EMy%20most%20favorite%20combo%20of%20eating%20this%20Chicken%20Biriyani%20is%20with%20some%20Mixed%20Veg%20Raita%20(chopped%20cucumber,%20carrots,%20tomato,%20onions,%20green%20chillies%20and%20corriander%20leaves%20in%20seasoned%20Yogurt)%20,%20some%20fried%20Papad%20and%20Mango%20pickle...mmmmm...yummy!!%3C/p%3E%3Cp%3EManish%20likes%20his%20in%20a%20Trivandrum%20version,%20where%20some%20chicken%20gravy%20is%20also%20served%20on%20the%20side.%20So%20I%20scooped%20out%20a%20little%20gravy%20after%20the%20step%20where%20I%20add%20the%20Yogurt-mint-corriander%20paste%20to%20the%20chicken%20and%20before%20the%20gravy%20thickens,%20which%20is%20a%20good%20side%20dish%20as%20well.%3C/p%3E%3Cp%3ETry%20this%20Chicken%20Biriyani%20today%20and%20please%20everyone%20in%20your%20home,%20it%20hardly%20takes%2030%20-%2040%20minutes%20to%20prepare%20:-)%20Enjoy!!%3C/p%3E%3Cp%3E-Manju%3C/p%3E){kind=link}
