- Preheat oven to 375 degrees F.In a medium saucepan saute/fry shallot and garlic till golden brown 2 min. Add in sausage and continue to cook till meat is browned, about 5 min. Add in oregano and parsley and season to taste. Remove from heat and cold completely.
- Combine sausage mix with cheese. Stir well with wooden spoon till mix is combined.
- Make a slit in the bottom of the chicken breasts running the length of the breast., but not through. Fill each breast with about 1-2 tbsp. of stuffing. Brush chicken with egg white where slit has been made. Sprinkle with salt and pepper and then wrap with pancetta. Secure by tying with butcher's twine.
- In a medium skillet on high, sear chicken breasts in remaining oil till golden brown, about 2 min per side. Transfer breasts to roasting pan and finish baking in a 350 D oven for 10- 15 min, or possibly till juices run clear. To test, insert a small knife into the middle of chicken breast and remove. It should be hot.
