Ingredientes

  • 60 split chicken breasts
  • 3 lbs flour
  • 1 cup oil
  • 2 cups onions, diced
  • salt to taste
  • 1/4 cup tomato paste
  • 2 cans #10 can tomato diced
  • white pepper to taste
  • 1 cup chicken base
  • 2 qt water
  • 1 Tbsp ground bay leaf
  • 1 Tbsp ground thyme
  • 1 Tbsp basil
  • 5 lbs mushrooms
  • 1/8 cups cognac or brandy
  • 12 green peppers, cut in strips

Direcciones

  1. Place oil in skillet, get nice and hot.
  2. Dredge chicken in seasoned flour and place in oil; saute until golden brown.
  3. Add onions, mushrooms, and green peppers. Saute lightly.
  4. Add all other ingredients and simmer for 1 hour. Serve over pasta or rice.
