Chicken Enchilladas

Ingredientes

  • 1 pkt chicken breast, no skin, no bone - minced
  • 1 sm jar green chiles minced
  • 1 sm onion -- minced
  • 2 Tbsp. butter
  • 2 can cream of chicken soup undiluted
  • 1 can cream of mushroom soup undiluted
  • 1 sm lowfat sour cream
  • 16 ounce cheddar cheese -- shredded
  • 1 pkt flour tortillas -- 8-inch

Direcciones

  1. Cook chicken in salted water till tender, about 1 hour and then cube. Saute/fry onion, green chiles, and butter about 10 min. Put chicken pcs in skillet with onion/chile mix and add in undiluted soups. Cook till bubbly. Mix in small carton of lowfat sour cream and 1 c. cheddar cheese. Spread thin layer in bottom of 9 x 13 inch pan. Stuff mix into flour tortillas, roll, and cover with remaining mix. Sprinkle remaining cheese over top and bake at 350 degrees 20- 30 min.
