Receta Chicken Flautas

- Cook onions in 2 Tbsp. of oil over medium heat till transparent. Add in spices and chicken. Cook 1-2 more min; set aside.
- Place oil in a deep fryer, or possibly large heavy skillet; heat to medium high. Carefully dip each tortilla in warm oil for a few seconds each, just to soften them up and drain them on paper towels.
- Divide the chicken mix between the tortillas and roll them up, securing each one with a toothpick.
- Fry the flautas till golden on all sides; drain on paper towels.
- Serve the flautas with a dollop each of lowfat sour cream, Guacamole, and Salsa Fresca and sprinkle with a little grated cheese.
