Chicken Flautas

Ingredientes

  • 1 1/2 c. cooked chicken
  • 1 c. minced onion
  • 1/2 c. canned mild green chilies
  • 1/4 teaspoon grnd cumin
  • 1/2 teaspoon chili pwdr
  • 1/4 teaspoon grnd oregano
  • 8 corn tortillas
  • 2-4 c. vegetable oil
  • 1 1/2 c. lowfat sour cream
  • 1 1/2 c. guacamole
  • 1 1/2 c. Salsa Fresca
  • 1 1/2 c. grated Cheddar cheese

Direcciones

  1. Cook onions in 2 Tbsp. of oil over medium heat till transparent. Add in spices and chicken. Cook 1-2 more min; set aside.
  2. Place oil in a deep fryer, or possibly large heavy skillet; heat to medium high. Carefully dip each tortilla in warm oil for a few seconds each, just to soften them up and drain them on paper towels.
  3. Divide the chicken mix between the tortillas and roll them up, securing each one with a toothpick.
  4. Fry the flautas till golden on all sides; drain on paper towels.
  5. Serve the flautas with a dollop each of lowfat sour cream, Guacamole, and Salsa Fresca and sprinkle with a little grated cheese.
