Receta Chicken Hymettus Salad

- Thinly slice the chicken breasts and pour over the lime juice and zest.
- Marinate overnight. Turn occasionally.
- Heat the butter in a saute/fry pan, add in 2 Tbsp. of extra virgin olive oil and saute/fry the chicken slices over a high heat.
- When almost cooked, add in the turmeric, thyme, mint, seasoning and honey.
- Simmer for 1 minute.
- Allow to cold slightly. Scatter over the salad leaves.
- Mix together the remainder of the lime juice and extra virgin olive oil and drizzle over the salad.
- Dress with toasted almonds.
