Receta Chicken Hymettus Salad

Ingredientes
- 4 x skinned and boned chicken breasts Zest and juice of 3 limes or possibly 2 lemons Good healthy pinch of turmeric
- 25 gm butter
- 4 Tbsp. extra virgin olive oil
- 2 Tbsp. runny honey
- 2 tsp fresh thyme or possibly 1 tsp dry
- 2 tsp fresh mint of 1 tsp dry Salt and grnd black pepper
- 25 gm flaked almonds Lots of crisp salad leaves, (e.g. Exofic, Mesclun, Barbeque)
Direcciones
- Thinly slice the chicken breasts and pour over the lime juice and zest.
- Marinate overnight. Turn occasionally.
- Heat the butter in a saute/fry pan, add in 2 Tbsp. of extra virgin olive oil and saute/fry the chicken slices over a high heat.
- When almost cooked, add in the turmeric, thyme, mint, seasoning and honey.
- Simmer for 1 minute.
- Allow to cold slightly. Scatter over the salad leaves.
- Mix together the remainder of the lime juice and extra virgin olive oil and drizzle over the salad.
- Dress with toasted almonds.
