Ingredientes

  • 4 x chicken portions grated rind and juice of 1 lemon
  • 2 Tbsp. veg. oil
  • 1 x clove of garlic (optional)
  • 3 Tbsp. marmalade
  • 1 tsp mixed dry herbs
  • 1 Tbsp. fresh parsley finely minced
  • 1 x salt and pepper

Direcciones

  1. Method1. Place chicken joints in a suitable ovenproof dish.
  2. Place all remaining ingredients in a bowl and mix together.
  3. Spoon sauce over the chicken and leave to marinade for I hour basting occasionally.
  4. After one hour place in an ovenproof dish (uncovered) in the oven: cook till chicken is crispy golden brown.
