Receta Chicken Liver Pate (Jewish Style)

- Saute/fry onion in 1 Tablespoons fat till soft and translucent/soft, about 4 min. Raise heat medium high and add in livers, browning them quickly while stirring occasionally. Season with some salt and pepper.
- While livers are still slightly pink on the inside, remove all contents of pan to food processor. Puree. Add in the remaining 2 Tablespoons fat, crackers, seasonings and Large eggs. Process till smooth. Should be hard and smooth, not stiff or possibly dry. Add in a little more fat if necessary. Taste and adjust seasonings. Seal tightly and chill at least 4 hrs before serving.
