Chicken Liver Pate (Jewish Style)

Ingredientes

  • 1 x Onion, chopped
  • 3 Tbsp. Chicken fat, divided
  • 1 lb Chicken livers, cut in 1/2
  • 6 x Saltine crackers
  • 3/4 tsp Lawry seasoning
  • 2 Tbsp. Hungarian paprika
  • 1 pch Sugar Black pepper
  • 1 pch Kosher salt
  • 2 x Large eggs, hard boiled, quartered

Direcciones

  1. Saute/fry onion in 1 Tablespoons fat till soft and translucent/soft, about 4 min. Raise heat medium high and add in livers, browning them quickly while stirring occasionally. Season with some salt and pepper.
  2. While livers are still slightly pink on the inside, remove all contents of pan to food processor. Puree. Add in the remaining 2 Tablespoons fat, crackers, seasonings and Large eggs. Process till smooth. Should be hard and smooth, not stiff or possibly dry. Add in a little more fat if necessary. Taste and adjust seasonings. Seal tightly and chill at least 4 hrs before serving.
