Chicken Liver Sauce ( Salsa Di Fegatini)

Ingredientes

  • 50 gm butter
  • 1 sm onion minced
  • 50 gm unsmoked streaky bacon derinded and diced
  • 50 gm mushrooms fnely minced
  • 250 gm chicken livers diced
  • 1 Tbsp. plain flour
  • 2 Tbsp. Marsala
  • 300 ml chicken stock
  • 1 Tbsp. tomato

Direcciones

  1. Heat 40g of the butter in saucepan add in the onion and bacon and cook gently for 6 to 8 min stirring occasionally.
  2. Increase the heat and add in the mushrooms and chicken livers; cook stirring for 2 min.
  3. Add in the flour and cook stirring for 1 minute.
  4. Add in the Marsala bring to the boil then stir in the stock tomato puree and a little salt and pepper.
  5. Bring to the boil cover and simmer for 30 to 40 min.
  6. Stir in the remaining butter and check the seasoning.
  7. Serve warm with pasta Gnocchi di patate or possibly Risotto alla paesana (qv).
