%20for%20a%20couple%20weeks%20now%20and%20they%20are%20so%20sweet%20and%20flavorful%20-%20I%20am%20hoping%20we%20can%20at%20least%20enjoy%20them%20for%20a%20few%20more%20weeks.%20That's%20my%20roundabout%20way%20of%20suggesting%20that%20you%20make%20this%20delicious%20meal%20now,%20since%20there%20may%20not%20be%20much%20of%20a%20future%20for%20tomatoes%20on%20the%20east%20coast%20this%20summer...%3C/p%3E%3Cp%3EThis%20dish%20is%20inspired%20by%20a%20similar%20one%20I%20had%20at%20Cucina,%20an%20upscale%20Italian%20restaurant%20here%20in%20Woodstock%20(photo%20below%20from%20their%20site)%20that%20we%20really%20like.%20A%20lot%20of%20other%20people%20seem%20to%20like%20it,%20too,%20including%20the%20Hudson%20Valley%20glitterati%20-%20the%20last%20time%20we%20ate%20there%20we%20were%20seated%20next%20to%20Uma%20Thurman%20and%20saw%20Natalie%20Merchant%20walking%20in%20as%20we%20walked%20out.%20That's%20just%20how%20we%20roll%20in%20the%20most%20famous%20small%20town%20in%20America%20(in%20your%20face,%20Phoenicia!)%3C/p%3E%3Cp%3EAnyway,%20back%20to%20the%20recipe.%20This%20is%20a%20simple%20meal%20but%20sooooo%20good.%20The%20chicken%20is%20crispy%20outside%20and%20tender%20inside%20with%20a%20nice%20crunchy,%20salty,%20cheesy%20crust%20that%20is%20enhanced%20by%20squeezing%20a%20little%20lemon%20juice%20over%20it.%20And%20the%20sweet,%20juicy%20tomatoes%20play%20nicely%20with%20the%20fresh,%20peppery%20bite%20of%20the%20arugula%20combined%20with%20a%20splash%20of%20olive%20oil%20and%20rich,%20sweet%20balsamic%20vinegar.%3C/p%3E%3Cp%3EI%20have%20to%20admit%20that%20I%20LOVE%20pounding%20the%20crap%20out%20of%20a%20chicken%20cutlet%20until%20it%20is%20%22only%20wafer%20thin.%22%20There's%20really%20no%20better%20way%20to%20get%20out%20a%20little%20aggression%20(the%20bird%20is%20already%20dead,%20after%20all.)%20Muuuuuccchh%20cheaper%20and%20quicker%20than%20talk%20therapy...%3C/p%3E%3Cp%3EAnd%20I%20love%20this%20metal%20mallet%20I%20got%20for%20the%20purpose.%20It's%20got%20one%20flat%20and%20one%20spiked%20side%20and%20is%20actually%20surprisingly%20light%20and%20easy%20to%20wield.%20And%20it%20removes%20my%20anxiety%20over%20using%20a%20wooden%20mallet%20to%20pound%20meat%20as%20it%20just%20seems%20like%20it%20has%20to%20be%20nearly%20impossible%20to%20get%20a%20wooden%20one%20truly%20clean.%20Not%20so%20with%20the%20metal%20kind%20which%20I%20wash%20and%20then%20put%20in%20the%20dishwasher%20just%20to%20be%20safe.%3C/p%3E%3Cp%3EAlthough%20I%20am%20in%20no%20way%20above%20using%20prepared%20breadcrumbs,%20I%20was%20overtaken%20by%20feelings%20of%20guilt%20while%20staring%20at%20a%20Bread%20Alone%20baguette%20I'd%20unintentionally%20let%20go%20stale%20on%20the%20counter.%3C/p%3E%3Cp%3ESo%20I%20made%20a%20small%20tub%20of%20breadcrumbs%20by%20food%20processing%20the%20bread%20to%20fine%20crumbs%20and%20then%20adding%20some%20grated%20Parmesan,%20sea%20salt%20and%20black%20pepper%20to%20make%20the%20breading%20mixture.%3C/p%3E%3Cp%3EThe%20process%20of%20breading%20and%20frying%20the%20chicken%20always%20takes%20a%20little%20more%20time%20and%20effort%20than%20I'd%20like%20(mainly%20to%20clean%20it%20up)%20but,%20on%20the%20whole,%20this%20is%20a%20fairly%20easy%20meal%20to%20assemble.%20The%20chicken%20pieces%20are%20quite%20thin%20(especially%20if%20you've%20got%20any%20anger%20or%20frustration%20you%20need%20to%20work%20out)%20so%20they%20cook%20quickly.%3C/p%3E%3Cp%3EI%20made%20the%20salad%20with%20some%20arugula%20I%20picked%20out%20of%20our%20little%20container%20garden%20-%20I%20love%20being%20able%20to%20pick%20it%20while%20it's%20still%20young%20and%20tender%20and%20has%20not%20yet%20turned%20bitter%20or%20tough.%3C/p%3E%3Cp%3EAnd%20topped%20it%20with%20some%20of%20our%20first%20fresh%20tomatoes.%20Then%20drizzled%20some%20olive%20oil,%20balsamic%20vinegar%20and%20a%20tiny%20bit%20of%20salt%20over%20it%20all.%3C/p%3E%3Cp%3EIt%20is%20delicious...%20You're%20welcome.%3C/p%3E%3Cp%3EChicken%20Milanese%20On%20a%20Bed%20of%20Arugula%20&%20Tomatoes%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Put%20one%20or%20two%20of%20the%20chicken%20cutlets%20in%20a%20plastic%20bag%20(you%20can%20also%20use%20wax%20paper%20or%20plastic%20wrap%20but%20a%20bag%20will%20work%20just%20as%20well%20and%20is%20less%20wasteful),%20lay%20them%20on%20a%20cutting%20board%20and%20pound%20them%20with%20a%20mallet%20or%20rolling%20pin%20until%20they%20are%20nice%20and%20flat%20and%20thin%20(you're%20shooting%20for%20a%20thickness%20of%20roughly%201/2%20inch.)%20Repeat%20with%20the%20others%20and%20set%20them%20aside.%3C/p%3E%3Cp%3E2.%20Prepare%20your%20breading%20station:%20combine%20the%20flour,%20salt%20and%20pepper%20on%20a%20plate%20or%20a%20rimmed%20baking%20dish,%20put%20the%20beaten%20eggs%20in%20a%20shallow%20bowl%20next%20to%20the%20flour,%20combine%20the%20breadcrumbs,%20grated%20parmesan%20and%20a%20little%20more%20salt%20in%20a%20third%20rimmed%20dish%20next%20to%20the%20eggs.%20The%20order%20should%20be%20flour,%20eggs,%20breadcrumbs.%3C/p%3E%3Cp%3E3.%20Working%20one%20at%20a%20time,%20dredge%20the%20flattened%20chicken%20cutlets%20in%20the%20seasoned%20flour,%20making%20sure%20you%20coat%20them%20well,%20then%20dip%20them%20in%20the%20egg%20(again,%20cover%20the%20whole%20piece)%20but%20try%20to%20let%20the%20excess%20egg%20drip%20off%20back%20into%20the%20bowl,%20and%20then%20roll%20them%20in%20the%20breadcrumbs%20making%20sure%20you%20cover%20all%20the%20surfaces%20(you%20can%20pick%20some%20up%20and%20sprinkle%20it%20on%20the%20cutlet%20if%20this%20is%20challenging.)%20Set%20each%20piece%20aside%20as%20you%20finish%20then%20go%20wash%20your%20hands.%3C/p%3E%3Cp%3E4.%20Heat%201/3%20cup%20of%20olive%20oil%20in%20a%20wide%20shallow%20frying%20pan%20or%20cast%20iron%20skillet%20over%20medium%20heat%20until%20hot%20but%20not%20smoking.%20Fry%20the%20chicken%20pieces%20until%20golden%20brown%20-%20about%203-5%20minutes%20on%20each%20side%20then%20remove%20them%20from%20the%20pan%20and%20drain%20on%20a%20paper%20bag%20(or%20a%20plate).%3C/p%3E%3Cp%3E5.%20Divide%20the%20arugula%20between%20four%20plates%20and%20top%20with%20the%20chopped%20tomatoes.%20Drizzle%20the%20greens%20and%20tomatoes%20with%20a%20little%20olive%20oil,%20a%20splash%20of%20balsamic%20vinegar%20and%20a%20little%20sea%20salt%20and%20black%20pepper%20then%20top%20each%20one%20with%20a%20piece%20of%20chicken.%20Serve%20with%20a%20wedge%20of%20lemon%20on%20the%20side.%3C/p%3E){kind=link}
