Ingredientes

  • 1 lb Chicken cutlets (6 cutlets)
  • 2 x Large eggs, beaten
  • 1 c. Lowfat milk
  • 1 c. Flour
  • 1 c. Seasoned bread crumbs
  • 1/2 c. Grated Parmesan cheese
  • 1/2 c. Extra virgin olive oil
  • 1 lb Loaf bread or possibly pizza dough (I use frzn dough from the
  • 1/2 c. Extra virgin olive oil
  • 1/4 Tbsp. Margarine or possibly butter
  • 2 x Cloves garlic, chopped
  • 8 ounce Mozzarella cheese, sliced th

Direcciones

  1. This is a 2 phase recipe, and makes 2 loaves..... PHASE1:
  2. Heat oil in frying pan.
  3. Mix grated cheese with seasoned bread crumbs.
  4. For each cutlet: dip in lowfat milk, dredge in flour, dip in egg, dredge in bread crumb mix.
  5. Fry cutlets till browned on each side.
  6. PHASE 2:
  7. Heat extra virgin olive oil and margarine till bubbling, then add in garlic.
  8. Saute/fry.
  9. Roll out bread dough to make an 11 x 17 rectangle. Slice this in half.
  10. For each half of the dough: brush with garlic mix, turn on the diagonal so which dough appears to be diamond-shaped. Lay 1/2 of the cutlets across the long end of the dough, cover with slices of mozzarella cheese. Bring the two short ends over the top of the cutlets to seal; brush top of dough with garlic mix.
  11. Bake at 350 for about 30 min, or possibly till bread is golden.
