.%20Remove%20the%20mushrooms%20from%20the%20water%20and%20pour%20the%20remaining%20mushroom%20stock%20into%20the%20pot%20of%20reserved%20broccoli%20stock.%3C/p%3E%3Cp%3EPut%20one%20tablespoon%20of%20olive%20oil%20in%20a%20saute%20pan%20and%20brown%20the%20two%20chicken%20breast%20over%20medium-high%20heat.%20Once%20browned%20on%20both%20sides,%20remove%20the%20pan%20from%20the%20heat,%20take%20the%20chicken%20and%20coarsely%20chop%20and%20return%20to%20the%20pan.%20Add%201/4%20teaspoon%20of%20salt%20and%20a%20teaspoon%20of%20fresh%20ground%20pepper.%20Return%20the%20pan%20to%20the%20stove%20and%20stir%20the%20chopped%20chicken%20over%20medium%20heat%20until%20cooked.%20Add%20a%201/4%20cup%20of%20dry%20white%20wine%20to%20deglaze%20the%20pan%20and%20continue%20to%20cook%20until%20almost%20dry.%20Set%20the%20chicken%20aside.%3C/p%3E%3Cp%3ENow....in%20a%2012%20inch%20skillet,%20heat%20two%20or%20three%20tablespoons%20of%20chicken%20fat.%3C/p%3E%3Cp%3EWhat?????%20Did%20he%20say%20chicken%20fat?????%3C/p%3E%3Cp%3EI%20have%20made%20it%20a%20practice%20of%20saving%20the%20fat%20whenever%20I%20cook%20some%20kind%20of%20beef%20or%20poultry.%20Beef,%20lamb,%20chicken,%20turkey%20whatever.%20I%20pour%20off%20the%20fat%20and%20freeze%20it.%3C/p%3E%3Cp%3EIf%20you%20are%20like%20most%20people,%20you%20don't%20have%20chicken%20fat%20in%20the%20fridge%20so%20simply%20use%20butter%20but%20IN%20THE%20FUTURE.......start%20saving%20your%20fat!%3C/p%3E%3Cp%3EWhen%20the%20fat%20has%20melted,%20saute%20the%20onions,%20bell%20pepper%20and%20bay%20leaf%20over%20low%20heat%20for%2015%20to%2020%20minutes.%20This%20gives%20the%20bay%20leaf%20time%20to%20sweat%20and%20add%20flavor.%20Don't%20brown%20the%20onions.%3C/p%3E%3Cp%3EWhile%20doing%20this,%20boil%20the%20reserved%20stock%20and%20cook%20the%20rice.%20(If%20there%20is%20not%20enough%20stock%20to%20cook%20the%20rice,%20add%20chicken%20broth).%3C/p%3E%3Cp%3EWhile%20the%20rice%20is%20cooking,%20coarsely%20chop%20the%20mushrooms%20and%20add%20to%20the%20saute%20pan%20continuing%20to%20cook%20over%20low%20heat.%3C/p%3E%3Cp%3EWhen%20the%20rice%20is%20cooked%20(10%20minutes)%20remove%20from%20the%20water%20and%20drain.%3C/p%3E%3Cp%3ECoarsely%20chop%20the%20broccoli%20and%20add%20it%20to%20the%20pan%20then%20add%20the%20chicken%20and%20then%20add%20the%20rice.%20(Don't%20simply%20dump%20both%20bags%20of%20rice....you%20may%20not%20want%20all%20that%20rice%20so%20dump%20the%20first%20bag%20and%20add%20as%20much%20of%20the%20second%20bag%20as%20you%20wish).%3C/p%3E%3Cp%3EThat's%20it!!%20Stir%20it%20and%20serve%20it!%3C/p%3E%3Cp%3EChicken%20Pilau%20purists%20will%20say%20this%20isn't%20Chicken%20Pilau%20and%20they%20will%20probably%20be%20right.%20It%20if%20makes%20you%20feel%20better,%20cook%20a%20bunch%20of%20bacon%20and%20saute%20the%20vegetables%20in%20the%20bacon%20grease%20and%20chop%20up%20the%20bacon%20and%20throw%20it%20in%20at%20the%20end%20with%20the%20rice%20and%20chicken.%3C/p%3E%3Cp%3EAnother%20alternative%20is%20to%20add%20some%20smoked%20sausage%20but%20now%20we%20are%20getting%20back%20to%20Paula%20Dean%20territory.%3C/p%3E%3Cp%3ETry%20it%20my%20way.....no%20bacon%20or%20sausage.%20I%20think%20you%20will%20like%20it.%20Plus%20with%20brown%20rice%20and%20broccoli,%20you%20won't%20feel%20the%20need%20to%20go%20out%20and%20do%20something%20stupid%20like%20jog%20or%20work%20out.%3C/p%3E%3Cp%3EWhat%20do%20I%20drink%20with%20this??%3C/p%3E%3Cp%3EA%20lighter%20red%20wine%20such%20as%20Pinot%20Noir%20will%20stand%20up%20to%20this%20nicely.%20Most%20folks%20will%20want%20a%20white%20and%20if%20you%20have%20read%20my%20previous%20posts%20you%20know%20I%20abhor%20the%20nasty%20domestic%20chardonnays%20and%20think%20most%20pinot%20grigio%20is%20tasteless.%20So%20go%20with%20a%20white%20burgundy,%20whatever%20you%20can%20afford.%20But%20for%20a%20different%20taste,%20I%20would%20try%20a%20nice%20quality%20champagne.....I%20think%20you%20will%20be%20pleased%20with%20the%20match.%3C/p%3E){kind=link}
