%3C/p%3E%3Cp%3EI%20had%20absolutely%20no%20interest%20at%20all%20in%20cooking%20when%20I%20was%20a%20teenager%E2%80%A6.hehe.%20%20Maya%20used%20to%20be%20the%20food%20experimenter%20at%20home,%3C/p%3E%3Cp%3EI%20preferred%20to%20be%20the%20taste-tester%20and%20mummy%20used%20to%20reluctantly%20agree%20to%20her%3C/p%3E%3Cp%3Ewishes%20of%20trying%20something%20new%20now%20and%20then.%20She%20happened%20to%20eat%20a%20chicken%3C/p%3E%3Cp%3Esalad%20sandwich%20from%20a%20friend%E2%80%99s%20house%20one%20day,%20got%20the%20recipe%20from%20the%20friend%E2%80%99s%3C/p%3E%3Cp%3Emom%20and%20instantly%20wanted%20to%20try%20it%20at%20home%20as%20it%20seemed%20very%20easy.%20She%20must%20have%20been%20in%206th%20grade%3C/p%3E%3Cp%3Ethen.%3C/p%3E%3Cp%3EWe%20did%20not%20even%20know%20this%20sandwich%20was%20called%20chicken%20salad%20sandwich%20back%20then.%20Maya%E2%80%99s%20sandwich%20recipe%20was%20simple,%20it%20had%20chicken%20pieces%20that%20was%20boiled%20in%20water%20with%20ginger-garlic%20paste,%20salt%3C/p%3E%3Cp%3En%20pepper%20and%20pulled%20apart,%20grated%20carrots,%20mayonnaise,%20salt%20and%20pepper,%20but%20it%3C/p%3E%3Cp%3Ewas%20the%20tastiest%20sandwich%20we%20had%20ever%20eaten.%3C/p%3E%3Cp%3ECreamy,%20chunky%20and%20really%20good.%20%20Every%20time%20daddy%20brought%20home%20chicken%20to%20make%3C/p%3E%3Cp%3Echicken%20curry%20we%20would%20reserve%20a%20few%20pieces%20to%20make%20our%20favorite%20chicken%20sandwich%20and%20I%20happily%20helped%20her%20while%20she%20made%20it%20;-)%3C/p%3E%3Cp%3EI%20learnt%20how%20to%20make%20chicken%20salad%20sandwich%20the%20way%20it's%20made%20here%20in%20the%20US%20after%20watching%20it%20on%20some%20show%20on%20Food%20Network.%20Along%20with%20cubed%20chicken%20and%20mayonnaise,%20celery,%20cranberries,%20walnuts%20or%20even%20grapes,%3C/p%3E%3Cp%3Eherbs%20like%20dill%20or%20cilantro%20or%20parsley,%20sometimes%20even%20a%20dash%20of%20hot%20sauce%20is%20added%20in%3C/p%3E%3Cp%3Ethe%20mix%20and%20it's%20usually%20served%20cold.%20%20I've%20tried%3C/p%3E%3Cp%3Eit%20several%20times%20at%20home%20and%20must%20say%20Manish%20&%20I%20very%20much%20enjoy%20it%20every%20time%20and%20of-late%20our%20lilAppu%20too.%3C/p%3E%3Cp%3EThese%20sandwich%3C/p%3E%3Cp%3Epinwheels%20were%20just%20a%20fun%20idea%20of%20mine%20one%20day%20after%20I%20came%20back%20home%20from%3C/p%3E%3Cp%3Ework.%20It%20was%20a%20long%20day%20and%20I%20needed%20to%20rejuvenate%20myself.%20My%20favorite%20way%20to%20de-stress%20is%20try%20out%20something%20new%20in%20the%20kitchen...lol!%20I%20decided%20to%3C/p%3E%3Cp%3Emake%20chicken%20salad%20sandwiches%20as%20that%20would%20keep%20me%20busy%20for%20a%20while,%20but%20then%3C/p%3E%3Cp%3Ewhile%20taking%20out%20the%20bread%20I%20thought%20why%20not%20roll%20out%20the%20bread%20with%20a%20rolling%20pin,%3C/p%3E%3Cp%3Eadd%20the%20chicken%20salad%20and%20cut%20them%20into%201%E2%80%9D%20sized%20pieces.%3C/p%3E%3Cp%3ETurned%20out%3C/p%3E%3Cp%3Eto%20be%20a%20fun%20dinner%20and%20lil%E2%80%99Appu%20and%20Manish%20totally%20enjoyed%20it%20and%20had%20no%20clue%3C/p%3E%3Cp%3Ehow%20many%20sandwiches%20they%20actually%20ate%20that%20night%20in%20the%20form%20of%20pinwheels%20%20;-)%20I%20did%20not%20trim%20out%20the%20crust%20of%20the%20bread,%20but%20you%20can%20for%20a%20better%20presentation%20and%20I've%20used%20whole%20wheat%20bread.%3C/p%3E%3Cp%3EThis%20is%20a%3C/p%3E%3Cp%3Efun%20idea%20for%20a%20tea-party%20or%20as%20an%20appetizer%20for%20any%20gathering.%20%20Serve%20it%20cold%20or%20at%20room%20temperature.%20I%20love%3C/p%3E%3Cp%3Eadding%20walnuts%20and%20dried%20cranberries%20for%20extra%20crunch%20and%20flavor%20but%20was%20out%3C/p%3E%3Cp%3Eof%20those%20the%20day%20I%20made%20these,%20but%20I%E2%80%99ve%20included%20that%20in%20the%20recipe%20below%20which%3C/p%3E%3Cp%3Eis%20how%20I%20usually%20always%20make.%3C/p%3E%3Cp%3EYou%20can%20even%20use%20tortilla%20or%20chapatis%20for%20filling%20the%20chicken%20salad%20in%20and%20roll%20them%20up%20and%20cut%20into%20pinwheels.%20Stick%20a%20toothpick%20at%20the%20end%20to%20hold%20it%20together%20and%20serve%20as%20appetizers.%20Bread%20easily%20sticks%20together%20at%20the%20end.%3C/p%3E%3Cp%3ESandwich%20Bread%20%E2%80%93%20toasted%20or%20not%20as%20needed%3C/p%3E%3Cp%3E1.%20Boil%20the%20chicken%20pieces%20(leg,%20thigh%20or%20breast%20pieces)%20in%20%20water%20enough%20to%20immerse%20the%20pieces.%20Add%20salt%20and%20pepper%20and%20cook%20until%20the%20chicken%20is%20bone%20tender%20and%20pulls%20apart%20easily.%20(Occasionally%20I%20also%20add%20fresh%20grated%20ginger-garlic%20while%20boiling%20for%20more%20flavor)%3C/p%3E%3Cp%3E2.%20In%20a%20large%20bowl,%20mix%20together%20all%20the%20other%20ingredients%20:%20celery,%20onion,%20walnuts,%20dried%20cranberries,%20cilantro/dill,%20mayonnaise,%20yogurt/sour%20cream,%20chilli%20powder/hot%20sauce%20and%20lemon%20juice.%3C/p%3E%3Cp%3E3.%20Toss%20in%20the%20chicken%20pieces%20once%20cooled%20and%20mix%20everything%20together,%20add%20more%20salt%20and%20fresh%20ground%20black%20pepper%20to%20taste%20and%20refrigerate%20until%20the%20flavor%20sets,%20about%202%20hrs.%3C/p%3E%3Cp%3EFor%20the%20pinwheels%3C/p%3E%3Cp%3E1.%20Take%20a%20slice%20of%20bread,%20roll%20it%20out%20with%20a%20rolling%20pin%20to%20become%20thinner.%3C/p%3E%3Cp%3E2.%20Spread%20the%20chicken%20salad%20on%20top,%20roll%20the%20bread%20slice,%20trim%20off%20the%20ends%20(or%20not)%20and%20cut%20into%201%E2%80%9D%20thick%20pieces.%20Enjoy!%3C/p%3E%3Cp%3EFor%20a%20basic%20chicken%20salad%20sandwich%3C/p%3E%3Cp%3EServe%20on%20artisan%20bread%20or%20regular%20sandwich%20bread%20%20with%20some%20lettuce%20and%20sliced%20tomatoes%20with%20the%20chicken%20salad%20spread%20on%20top,%20make%20a%20sandwich%20and%20enjoy%20with%20some%20chips%20and%20a%20pickle.%3C/p%3E%3Cp%3ENotes:%3C/p%3E%3Cp%3E1.%20The%20Chicken%20can%20be%20boiled%20in%20chicken%20broth%20if%20preferred.%3C/p%3E%3Cp%3E2.%20I%20like%20to%20use%20bone-in%20chicken%20as%20it%20has%20more%20flavor%20and%20pulls%20apart%20easily.%20If%20using%20only%20chicken%20breasts%20cut%20into%20small%20cubes.%3C/p%3E%3Cp%3E3.%20Some%20recipes%20include%20adding%20Dijon%20mustard%20paste%20either%20in%20the%20chicken%20salad%20or%20on%20the%20bread%20slice%20,%20but%20that's%20your%20choice.%3C/p%3E%3Cp%3EIt's%20a%20super%20easy%20recipe%20and%20trust%20me%20kids%20will%20love%20it%20as%20it%20is%20creamy%20and%20not%20spicy.%20I%20had%20included%20chicken%20salad%20sandwiches%20as%20appetizer%20for%20Appu's%20Dino%20b'day%20party%20in%20the%20shape%20of%20dinosaurs%20;-)%20The%20kids%20loved%20it%20and%20it%20was%20all%20gone...%20For%20more%20flavor%20I%20spread%20a%20little%20ketchup%20on%20one%20slice,%20chicken%20salad%20on%20the%20other%20and%20sandwiched%20them%20up%20and%20cut%20into%20dino%20shapes%20:)%3C/p%3E%3Cp%3E-Manju%3C/p%3E){kind=link}
