%20the%20grill%20is%20usually%20fired%20up%203%20-%204%20times%20a%20week.%20%20From%20the%20garlic%20bread%20to%20the%20veggies%20and%20meats,%20I%20love%20the%20ease%20of%20putting%20the%20whole%20meal%20on%20the%20grill.%20%20Saving%20time%20on%20cleanup%20is%20a%20bonus.%3C/p%3E%3Cp%3EOver%20the%20holidays,%20Amazon%20had%20The%20Sunset%20Grill%20Cookbook%20on%20one%20of%20their%20%22Deal%20of%20the%20Day%22%20specials%20and%20I%20tossed%20one%20in%20the%20cart%20for%20as%20a%20gift%20for%20my%20friend%20Becky%20(of%20Becky's%20Famous%20Football%20Stromboli!).%20%20Not%20wanting%20to%20give%20her%20something%20that%20I%20couldn't%20vouch%20for,%20I%20figured%20I'd%20better%20add%20one%20of%20those%20books%20for%20myself%20as%20well%20and%20I'm%20thrilled%20I%20did!!%20%20Last%20night%20was%20the%20first%20time%20I%20ventured%20into%20the%20book,%20and%20if%20the%20rest%20of%20the%20recipes%20are%20half%20as%20good%20as%20the%20Chicken%20Satay%20with%20Spicy%20Peanut%20Sauce,%20the%20book%20is%20a%20winner.%3C/p%3E%3Cp%3ESimple%20marinated%20chicken%20is%20threaded%20onto%20skewers%20and%20served%20alongside%20a%20Spicy%20Peanut%20Sauce.%20%20Perfectly%20complementing%20the%20Asian%20flavors%20of%20the%20chicken%20skewers,%20the%20sauce%20quickly%20became%20my%20favorite%20part%20of%20the%20meal...%20part%20peanut%20butter,%20part%20coconut%20with%20a%20ginger%20essence%20and%20a%20bright%20squeeze%20of%20lime%20to%20finish%20it%20off.%20%20A%20bed%20of%20coconut%20rice%20rounded%20out%20our%20meal%20and%20everyone%20including%20the%20dishwasher%20(me!)%20was%20happy!%3C/p%3E%3Cp%3EChicken%20Satay%20with%20Spicy%20Peanut%20Sauce%3C/p%3E%3Cp%3EIn%20a%20small%20bowl%20combine%20the%20marinade%20ingredients%20(soy%20sauce%20through%20water)%20and%20whisk%20to%20combine.%20%20Add%20the%20chicken%20to%20a%20large%20zip%20top%20bag,%20add%20the%20marinade%20and%20seal.%20%20Squish%20the%20chicken%20around%20in%20the%20bag%20to%20coat%20and%20place%20in%20the%20fridge%20for%20at%20least%204%20hours.%3C/p%3E%3Cp%3EMake%20the%20sauce.%20%20In%20a%20medium%20bowl%20combine%20all%20the%20sauce%20ingredients%20and%20whisk%20well%20to%20combine.%20%20If%20sauce%20is%20too%20thick,%20add%20a%20little%20extra%20coconut%20milk,%20if%20sauce%20is%20too%20thin,%20add%20a%20little%20peanut%20butter.%20%20Taste%20and%20adjust%20ingredients%20to%20your%20taste%20(I%20love%20lime,%20so%20I%20added%20extra%20lime!)%20Set%20aside.%3C/p%3E%3Cp%3EThread%20the%20chicken%20onto%20skewers.%20%20If%20you%20are%20using%20wooden%20skewers,%20soak%20the%20skewers%20in%20water%20for%201/2%20hour%20before%20threading.%20%20Preheat%20grill%20on%20high.%20%20Place%20skewers%20on%20the%20hot%20grill%20and%20reduce%20heat%20to%20medium.%20%20Cook%20for%20about%203%20-%204%20minutes,%20then%20flip%20to%20grill%20the%20other%20side.%20%20Grill%20a%20few%20minutes%20more%20(time%20depends%20on%20how%20large%20your%20chunks%20or%20strips%20are!).%20%20Remove%20from%20grill%20when%20chicken%20is%20cooked%20through.%3C/p%3E%3Cp%3EServe%20over%20rice%20with%20the%20Peanut%20Sauce%20on%20the%20Side.%3C/p%3E){kind=link}
