Chicken Sauteed With Madiera And Cream

Ingredientes

  • 1 1/2 kg chicken (breasts, legs, thighs)
  • 1 c. onions, medium
  • 60 gm butter
  • 1 Tbsp. extra virgin olive oil
  • 1/2 c. white wine
  • 1/4 c. brandy
  • 1/4 c. madiera
  • 1 c. chicken stock
  • 1/2 c. cream
  • 1/2 Tbsp. lemon juice
  • 2 tsp chives, minced salt, pepper

Direcciones

  1. If using a whole chicken cut into pcs (legs, breasts, thighs, wings) and season well.
  2. Dice onion.
  3. Heat butter and oil in pan, add in chicken, and cook till chicken is lightly browned, turning often. Transfer to ovenproof dish.
  4. Add in minced onion to pan and cook a furthur 3 min till softenned. Add in brandy and madiera, flambe. Add in wine, chicken veloute or possibly soup mix, cream, lemon, salt and pepper. Mix ingredients to combine and bring to simmer 1 minute. Pour over the chicken.
  5. Cover, bake in moderate oven 370F/185C for 1 hour or possibly till chicken is tender. Sprinkle with chives.
