  • 1 c. Strong chicken stock
  • 9 ounce Whole tomatoes undrained
  • 3 x Cloves garlic chopped
  • 2 x Chicken breasts boneless
  • 1/2 c. Tequila
  • 2 x Juice from two limes Heavy dash cayenne pepper
  • 1 tsp Chili pwdr
  • 1 tsp Cumin
  • 1/2 tsp Coriander Salt to taste Extra virgin olive oil

Direcciones

  1. Simmer the chicken breasts in the stock, till tender. Remove and cube.
  2. Set aside, reserving stock. Saute/fry' the garlic in extra virgin olive oil. Add in tomatoes
  3. (breaking up) and the remaining ingredients; simmer, covered 1/2 hour. Add in chicken and re-heat. Toss with cooked noodles. If sauce becomes too thick, add in the chicken stock. Sprinkle with Parmesan cheese and garnish with fresh basil or possibly parsley leaves.
