.%20%20The%20oil%20is%20so%20wonderful%20one%20almost%20wants%20to%20dab%20it%20behind%20the%20ear.%20%20And%20just%20smell%20it%20all%20day.%20%20So%20I'm%20just%20making%20the%20tomato%20sauce%20right%20now%20with%20a%20bag%20of%20frozen%20leftover%20prob%203/4%20of%20a%20large%20can%20of%20canned%20tomatoes%20from%20somewhere.%20%20I%20discovered%20the%20bag%20just%20the%20other%20day%20in%20the%20freezer.%20%20I%20added%201/2%20a%20reg%20onion%20and%201/2%20a%20red%20onion,%20both%20of%20which%20were%20languishing%20in%20two%20seperate%20baggies%20in%20the%20fridge,%20two%20cloves%20of%20garlic.%20%20Some%20sorry%20looking%20baby%20carrots,%20about%201/4%20of%20a%20red%20pepper,%20some%20oregano,%20about%20only%20a%20slice%20chopped%20up%20of%20chilpotle%20pepper%20in%20adobo%20sauce%20(for%20the%20kids%20around%20here)%20chili%20powder,%20cumin%20about%201%20cup%20of%20chicken%20stock,%20salt%20and%20pepper.%20%20Just%20cooking%20it%20down%20before%20I%20pulverize%20it%20all%20up%20with%20an%20imersion%20blender.%20%20Before%20adding%20the%20other%20three%20chicken%20breasts%20into%20it.%20%20All%20three%20batches%20are%20going%20in%20the%20oven%20till%20after%20lunch%20sometime.%3C/p%3E%3Cp%3EHopefully%20the%20enchilada%20chicken%20won't%20be%20too%20spicy.%3C/p%3E%3Cp%3ELast%20week%20I%20made%20some%20interesting%20chicken%20and%20yams%20things....that's%20why%20the%20urgent%20need%20for%20a%20mexican%20market%20came%20about.%20%20That%20darn%20chilpotle%20pepper%20in%20adobo%20sauce%20has%20always%20been%20something%20I've%20looked%20for%20but%20never%20been%20able%20to%20fine.%20%20Having%20actually%20found%20the%20can,%20and%20seen%20what%20it%20actually%20looks%20like,%20I%20probably%20walked%20by%20it%20many%20times.%20%20But%20I%20made%20the%20chicken%20instead%20of%20sweet%20pot's%20I%20used%20some%20baby%20yams%20instead.%20%20And%20the%20recipe%20called%20for%20four%20peppers,%20I%20only%20used%20three%20and%20discarded%20all%20the%20seeds.%20%20Fat%20good%20that%20did,%20I'm%20sure%20discarding%20the%20seeds%20did%20nothing%20to%20control%20the%20heat%20what%20so%20ever.%20%20It%20was%20wayyyyy%20hot.%20%20But%20good%20thing%20we%20had%20a%20container%20of%20yogurt%20around%20that%20we%20jazzed%20up%20a%20bit.%20%20It%20was%20tolerable%20then.%20%20But%20the%20g'kids%20had%20to%20have%20some%20leftover%20roast%20beef%20and%20potatoes%20from%20the%20night%20before.%20%20Cause%20it%20was%20just%20toooo%20much%20for%20them..But%20the%20next%20day---wow,%20I%20ate%20all%20the%20chicken%20up.%20%20I%20couldn't%20believe%20how%20good%20it%20was%20as%20leftovers%20of%20course%20with%20the%20yogurt%20sauce.%20%20But%20still%20w-o-d-e-r-f-u-l%20stuff.%20%20I%20thought%20I'd%20never%20make%20it%20again.%20%20But%20changed%20my%20mind%20after%20eating%20some%20for%20breakfast,%20lunch%20and%20late%20nite%20snack.%3C/p%3E%3Cp%3EI%20also%20used%20the%20leftover%20yam%20to%20make%20a%20loaf.%20%20Didn't%20have%20quite%20the%20required%20amount%20of%20yam%20so%20added%20about%201/4%20cup%20of%20apple%20sauce.%20%20Also%20switched%20to%20coconut%20oil.%20%20And%20I%20made%20it%20gluten%20free.%20%20I%20mean,%20if%20it%20won't%20make%20a%20difference%20in%20texture%20I%20say%20make%20it%20gluten%20free.%20%20there's%20toooo%20much%20gluten%20in%20everything%20anyway.%20%20A%20little%20less%20is%20always%20a%20good%20thing.%20And%20since%20my%20daughter%20has%20gone%20gluten%20free%20I%20make%20an%20effort%20to%20make%20as%20much%20gluten%20free%20as%20possible.%20%20And%20actually%20I%20lost%20some%20weight%20and%20my%20diabetic%20overweight%20husband%20lost%20some%20weight.%20%20Without%20even%20trying%20we%20both%20lost%20weight.%20%20Just%20in%20time%20for%20thanksgiving%20dinner%20(which%20was%20also%20gluten%20free%20since%20that%20family%20that%20hosted%20it%20has%20a%20mother---asin%20my%20sister,%20that%20is%20gluten%20free)%20and%20since%20it's%20always%20a%20given%20that%20I%20must%20be%20skinnier%20than%20my%20sister.%20%20Well%20that%20worked%20out%20just%20fine.%20%20Still%20skinnier%20and%20still%20taller%20hahaha.....%3C/p%3E%3Cp%3EWell%20the%20sauce%20has%20to%20me%20sauced%20and%20the%203%20different%20chicken%20breasts%20won't%20get%20in%20the%20oven%20by%20themselves.%3C/p%3E%3Cp%3E....until%20later%20then,%3C/p%3E%3Cp%3Ewell%20so%20much%20for%20that%20-%20seems%20my%20oven%20isn't%20big%20enough%20for%20all%20this%20and%20once%20package%20of%20breasts%20was%20opened%20the%20count%20changed%20from%209%20to%2011.%20%20So%20even%20a%20better%20deal.%20%20So%20froze%20five%20breasts%20for%20another%20time,%20and%20only%20did%20the%20enchilada%20chicken%20and%20the%20blood%20orange%20olive%20oil%20and%20blackberry%20ginger%20balsamic.%20%20Also%20sprinkled%20it%20with%20some%20roasted%20chili%20&%20tamarind%20my%20current%20favorite%20spice%20mixture.%20%20Can't%20get%20over%20how%20wonderful%20this%20chicken%20combo%20smells.%20Yummmmmy...%3C/p%3E%3Cp%3EGet%20yourself%20to%20http://www.blued
