Ingredientes

  • 3 lb Chicken, cut into serving pcs, or possibly just use boned, skinned breasts Salt & pepper to taste
  • 3 Tbsp. Oil
  • 2 x Onions, sliced
  • 1 1/4 tsp Curry pwdr
  • 2 Tbsp. Tomato sauce
  • 3 c. Chicken broth
  • 1/2 Tbsp. Minced parsley
  • 1/2 Tbsp. Thyme
  • 2 x Bay leaves
  • 1 c. Peanut butter

Direcciones

  1. Season chicken with salt and pepper. Heat oil in frying pan and brown chicken pcs on all sidea. Transfer chicken to large pot and keep hot.
  2. Add in onions to frying pan and saute/fry till translucent/soft. Add in curry pwdr and tomato sauce. Stir till smooth, then add in 1 c. broth. Bring to a boil. Add in parsley, thyme, and bay leaves. Pour mix over chicken pcs. Simmer for 1 hour, or possibly till chicken is tender. Combine peanut butter with 2 c. broth over low heat. Season with salt and pepper. When sauce is smooth, pour over chicken. Simmer for 10 to 15 min more. Serve with rice.
