Receta Chicken With Peanut Butter Sauce

Ingredientes
- 3 lb Chicken, cut into serving pcs, or possibly just use boned, skinned breasts Salt & pepper to taste
- 3 Tbsp. Oil
- 2 x Onions, sliced
- 1 1/4 tsp Curry pwdr
- 2 Tbsp. Tomato sauce
- 3 c. Chicken broth
- 1/2 Tbsp. Minced parsley
- 1/2 Tbsp. Thyme
- 2 x Bay leaves
- 1 c. Peanut butter
Direcciones
- Season chicken with salt and pepper. Heat oil in frying pan and brown chicken pcs on all sidea. Transfer chicken to large pot and keep hot.
- Add in onions to frying pan and saute/fry till translucent/soft. Add in curry pwdr and tomato sauce. Stir till smooth, then add in 1 c. broth. Bring to a boil. Add in parsley, thyme, and bay leaves. Pour mix over chicken pcs. Simmer for 1 hour, or possibly till chicken is tender. Combine peanut butter with 2 c. broth over low heat. Season with salt and pepper. When sauce is smooth, pour over chicken. Simmer for 10 to 15 min more. Serve with rice.
