Chicken With Rosemary ( Pollo Con Rosmarino )

Ingredientes

  • 4 x chicken portions
  • 1 x salt and pepper
  • 2 Tbsp. oil
  • 25 gm butter
  • 23 x rosemary sprigs
  • 23 clv garlic
  • 8 Tbsp. dry white wine or possibly chicken stock

Direcciones

  1. Season the chicker with salt and pepper.
  2. Heat the oil butter rosemary and garlic in a large pan.
  3. Add in the chicken and fry for 10 to 12 min till golden brown turning once.
  4. Add in the wine or possibly stock and bring to just below boiling point.
  5. Simmer uncovered for 20 to 30 min till tender.
  6. Transfer the chicken to a warmed serving dish and keep warm.
  7. Remove the rosemary and garlic and spoon off the surplus fat from the pan.
  8. Add in 2 to 4 Tbsp. water to the pan juices and bring to the boil stirring to incorporate the sediment.
  9. Pour over the chicken to serve
  10. serves 4
