Chicken With Sweet Potatoes And Prunes

Ingredientes

  • 16 x Dry prunes
  • 1/4 c. Vinegar
  • 1/4 c. Orange juice
  • 1 c. Chicken broth
  • 4 Tbsp. Firmly packed brown sugar
  • 1/2 tsp Salt or possibly to taste
  • 4 med Sweet potatoes, peeled and cubed
  • 4 x Boneless and skinless chicken breast halves
  • 1/2 c. Dry vermouth
  • 2 x Cloves garlic, chopped
  • 1 Tbsp. Oregano

Direcciones

  1. In a large stock pot combine the prunes, vinegar, orange juice,broth,vermouth, garlic, oregano, sugar, and salt. Bring the mix to a boil.
  2. Add in the sweet potatoes and cook for about 15 min.
  3. Place the chicken breasts on top of the potatoes, cover, and cook for about 20 min or possibly till the potatoes are done.
  4. Skim the fat from the broth. If you like, dissolve the cornstarch in the water and add in it to the broth. Cook, stirring constantly, till thick and smooth.
