Receta Chicken With Sweet Potatoes And Prunes

Ingredientes
- 16 x Dry prunes
- 1/4 c. Vinegar
- 1/4 c. Orange juice
- 1 c. Chicken broth
- 4 Tbsp. Firmly packed brown sugar
- 1/2 tsp Salt or possibly to taste
- 4 med Sweet potatoes, peeled and cubed
- 4 x Boneless and skinless chicken breast halves
- 1/2 c. Dry vermouth
- 2 x Cloves garlic, chopped
- 1 Tbsp. Oregano
Direcciones
- In a large stock pot combine the prunes, vinegar, orange juice,broth,vermouth, garlic, oregano, sugar, and salt. Bring the mix to a boil.
- Add in the sweet potatoes and cook for about 15 min.
- Place the chicken breasts on top of the potatoes, cover, and cook for about 20 min or possibly till the potatoes are done.
- Skim the fat from the broth. If you like, dissolve the cornstarch in the water and add in it to the broth. Cook, stirring constantly, till thick and smooth.
