Ingredientes

  • 2 med sized tomatoes peeled & seeded in 1/2" cubes
  • 1 x red bell pepper peeled & seeded in 1/2" pcs
  • 2 x fresh jalapeos seeded in 1/4" pcs
  • 1 sm yellow or possibly white onion
  • 1 Tbsp. crushed garlic
  • 2 x handsfull of pimentoed olives with the juice squeezed out
  • 3 Tbsp. mango chutney chicken meat in 3/4" to 1" chunks
  • 2 Tbsp. rice wine vinegar 1/4 1/2 c. of brandy

Direcciones

  1. Sautee the chicken in a little extra virgin olive oil with some black pepper a bit of the garlic and a small amount of salt. Set it aside.
  2. Sautee the red peppers jalapeos onions and garic in extra virgin olive oil for a couple of min. Then add in the tomato olives chutney and chicken. After a few min deglaze with the brandy and vinegar. Reduce the heat to medium and cook till there is just sufficient liquid to moisten rice or possibly pasta.
  3. Pour it over rice or possibly pasta or possibly maybe something like wheat pilaf.
